Prepare the Beef Rib

Preheat your oven to 150°C (300°F). Season the whole beef rib generously with salt and pepper. Place it in a roasting pan and cover it with foil.

Roast the Beef

Roast the beef rib in the preheated oven for about 3 hours, basting occasionally with the juices in the pan. Remove the foil for the last 30 minutes to allow the meat to brown.

Cook the Yuca

While the beef is roasting, peel and cut the yuca into chunks. Bring a large pot of salted water to a boil and add the yuca. Cook for about 20-25 minutes, or until tender. Drain and set aside.

Prepare the Peppers

Slice the Jimmy Nardello peppers lengthwise and sauté them in a skillet with a little olive oil over medium heat until they are tender, about 5-7 minutes.

Serve

Once the beef is done, let it rest for 10 minutes before slicing. Serve the beef rib with the cooked yuca, sautéed peppers, salsa criolla, and drizzle with beef jus.
