Prepare the Dough
In a large mixing bowl, cream together the unsalted butter and granulated sugar until light and fluffy. Add the egg yolks one at a time, mixing well after each addition. Stir in the vanilla extract.
Combine Dry Ingredients
In a separate bowl, sift together the all-purpose flour, cornstarch, and baking powder. Gradually add the dry mixture to the butter mixture, mixing until a soft dough forms.
Chill the Dough
Wrap the dough in plastic wrap and refrigerate for at least 1 hour until firm.
Roll and Cut
Preheat the oven to 350°F (175°C). On a lightly floured surface, roll out the chilled dough to about 1/4 inch thick. Use a round cookie cutter to cut out circles and place them on a baking sheet lined with parchment paper.
Bake
Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden. Remove from the oven and let cool completely.
Assemble the Alfajores
Spread a generous layer of manjar blanco on the bottom of one cookie and sandwich it with another cookie. Repeat until all cookies are filled.
Dip in Chocolate
Melt the dark chocolate in a heatproof bowl over a pot of simmering water. Dip the filled alfajores halfway in the melted chocolate and place on a wire rack to cool.
Finish and Serve
Once the chocolate has set, dust the alfajores with powdered sugar before serving.
