Preparing the Broth

Roasting Ingredients

Start by roasting the onion and ginger over an open flame or in a hot pan until charred. This will enhance the flavor of the broth.

Cooking the Bones

In a large pot, add the beef bones and cover with 4 liters of water. Bring to a boil and then reduce to a simmer. Skim off any impurities that rise to the surface.

Adding Aromatics

Add the roasted onion, ginger, star anise, cinnamon stick, cloves, fish sauce, and salt to the pot. Simmer for at least 4 hours, adding water as needed to maintain the liquid level.

Cooking the Noodles and Beef

Preparing the Noodles

While the broth is simmering, cook the rice noodles according to package instructions until tender. Drain and set aside.

Preparing the Beef

Thinly slice the beef sirloin and set aside. The beef will be cooked in the hot broth when serving.

Assembling the Pho

Serving the Pho

In a bowl, place a portion of the cooked rice noodles, followed by a few slices of raw beef. Ladle the hot broth over the noodles and beef, which will cook the beef slightly.

Adding Toppings

Top the pho with bean sprouts, fresh basil, lime wedges, sliced chili peppers, green onions, and cilantro. Serve with hoisin and sriracha sauce on the side for added flavor.
