Prepare and marinate

Pat goat pieces dry with paper towel. In a large bowl combine yogurt, garlic paste, ginger paste, lemon juice, olive oil, salt, ground black pepper and all the Mandi Spice Mix ingredients (ground cumin, coriander, cardamom, cinnamon, cloves, nutmeg, baharat, turmeric, smoked paprika). Mix into a smooth marinade. Add goat pieces and massage thoroughly so every piece is coated. Cover and refrigerate at least 4 hours, preferably overnight for best flavor.

Make the braising liquid

In a large heavy-bottomed pot or Dutch oven, heat 1 tbsp oil over medium heat. Add quartered onion and tomato and sauté 4–5 minutes until lightly softened. Add the marinated goat (with any residual marinade) and brown on all sides, about 6–8 minutes. Pour in 1.5 liters of water, add 1 tsp salt and 1 bay leaf (and the whole spices: cardamom pods, cloves, cinnamon stick if you prefer extra aroma). Bring to a gentle boil, then reduce heat to low, cover and simmer gently for 1.5–2 hours, or until goat is very tender and nearly falling off the bone. Skim foam occasionally. When done, remove meat and keep warm. Reserve the cooking liquid; strain it into a large measuring jug or bowl, pressing solids to extract maximum flavor. You should have roughly 4–5 cups of rich broth—adjust as needed for the rice step.

For the Rice

Prepare rice

While the goat braises, rinse basmati rice until water runs clear and soak for 30 minutes. After straining the braising liquid, measure about 3.25 cups of liquid (use broth plus water if needed) for 2 cups of rice. In a heavy pot, heat 2 tbsp ghee or oil over medium heat. Add cardamom pods, whole cloves, cinnamon stick and the whole black lime or bay leaf; toast for 30 seconds until aromatic. Drain the soaked rice and add to the pot; gently sauté the rice for 1–2 minutes to coat grains with fat. Carefully pour in 3.25 cups of the reserved warm broth, add 1.5 tsp salt (adjust to taste) and stir once. Bring to a boil over medium-high heat, then reduce to the lowest simmer, cover tightly and cook undisturbed for 12–15 minutes until liquid is absorbed and rice is tender. Turn off heat and let rest, covered, for 10 minutes.

Assemble and Finish

Infuse saffron and combine

While rice rests, warm saffron threads in 1 tbsp warm water and drizzle over the rice, gently fluffing with a fork to distribute color and aroma. Place the reserved tender goat pieces on top of the rice to allow juices to meld for 5 minutes. For a traditional mandi touch, you may briefly roast the assembled rice and meat in a preheated oven at 200°C (390°F) for 8–10 minutes to create a light crust and deeper aroma (optional).

Garnish and serve

Transfer rice to a serving plate if desired, arrange goat pieces on top. Sprinkle crispy fried onions, toasted nuts and chopped cilantro over the dish. Serve immediately with lemon wedges and hot sauce or chili flakes on the side. Offer extra broth in a jug for pouring over individual servings if desired.
