Rinse and Cook Dal

Rinse 1 cup dal under cold running water until the water runs clear (3–4 rinses). Drain. Combine rinsed dal, 3 cups water, 1 tsp turmeric, and 1 tsp salt in a pressure cooker or heavy pot. If using a pressure cooker, cook for 3–4 whistles on medium heat (about 12–15 minutes), then let pressure release naturally for 10 minutes. If using a pot, simmer covered for 25–30 minutes until dal is very soft and breaks easily; add more water if needed. Once cooked, mash lightly with the back of a spoon or whisk to reach a slightly creamy consistency and set aside.

Heat Oil and Seeds

In a wide, heavy skillet or kadhai, heat 3 tbs oil and 1 tbs butter over medium heat until shimmering. Add 1 tsp cumin seeds and 1 tsp mustard seeds (if using). When seeds sputter, add a pinch of asafoetida and 2 dried red chilies; fry 10–15 seconds until fragrant.

Sauté Aromatics

Add 1 cup finely chopped onion to the pan. Sauté on medium heat, stirring, until the onion is soft and begins to brown at the edges (6–8 minutes). Add 1 tsp grated ginger, 3 minced garlic cloves, and 1 slit green chili (optional). Cook 1–2 minutes until raw smell disappears.

Cook Tomatoes and Spices

Add 1 cup chopped tomato and 1 tbs tomato paste (if using). Stir and cook until tomatoes break down and the oil starts to separate from the masala (6–8 minutes). Add 1 tsp red chili powder, 1 tsp coriander powder, 0.5 tsp cumin powder, and 0.5 tsp garam masala. Cook 1–2 minutes to bloom spices, stirring to avoid burning. Taste and add 1 tsp salt (adjust later when combined with dal).

Combine Dal and Masala

Pour the cooked dal into the skillet with the tomato-onion masala. Stir to combine. Add up to 1/2 cup additional water to reach desired consistency (for a medium-thick dal, use 1/2 cup). Bring to a gentle simmer and cook 5–7 minutes so flavors meld. Adjust salt and spice levels now.

Finishing & Garnish

Acid & Cream

Stir in 1 tsp amchur or 1 tsp lemon juice and 2 tbs cream or a spoonful of yogurt if using. Simmer 1 minute. This brightens the dal and adds richness.

Garnish and Serve

Turn off heat and sprinkle 1/4 cup chopped cilantro over the dal. Serve hot with lemon wedges on the side. Optionally drizzle a little additional melted ghee or do a final tempering: heat 1 tbs ghee, add a pinch of red chili flakes and pour over the dal for aroma.
