Method

Marinate Chicken

Prepare and marinate

Clean and pat dry the half chicken. Combine yogurt, minced garlic, grated ginger, ground coriander, ground cumin, turmeric, ground cardamom, black pepper, baharat (or mandi spice), 1.25 tsp salt, lemon juice, and olive oil in a bowl. Rub the marinade thoroughly over and under the skin and inside the cavity. Cover and refrigerate for at least 2 hours, preferably overnight for best flavor.

Make Mandi Spice Stock

Simmer aromatic stock

In a large pot, add 6 cups water, quartered onion, halved tomato, cinnamon stick, cloves, peppercorns, bay leaves, star anise, cardamom pods, whole black lime, and optional beef/lamb fat. Bring to a boil, then reduce heat and simmer gently for 25–30 minutes to develop a fragrant stock. Taste and adjust salt. Strain and reserve 3.25 cups of the clear stock for cooking rice; keep remaining stock to baste chicken or store for another use.

Cook Rice

Rinse and soak rice

Rinse basmati rice under cold water until water runs clear to remove excess starch. Soak the rice in cold water for 20–30 minutes, then drain thoroughly.

Par-cook rice with loomi

Bring 3.25 cups of the reserved aromatic stock to a gentle boil in a medium pot. Add drained rice, 1 tsp salt, and the whole black lime (loomi). Cook on medium-high until water returns to a simmer and rice is about 70–80% cooked (about 6–8 minutes depending on rice). Drain rice in a fine sieve to remove excess liquid and set aside.

Roast Chicken

Preheat oven and prepare

Preheat oven to 200°C (400°F). Place the marinated half chicken on a roasting tray. If you have reserved aromatic stock, baste the chicken with 2–3 tablespoons to keep it moist. Optionally tuck some of the par-cooked rice loosely under the chicken cavity so it absorbs juices while roasting.

Roast until juicy

Roast the chicken for 30–40 minutes, basting once or twice with pan juices or reserved stock. Use a meat thermometer: the chicken is done when internal temperature at the thickest part reads 74°C (165°F). If the skin browns too quickly, tent with foil. For crispier skin, finish with 3–5 minutes under the broiler.

Combine rice and chicken for final steam

In a large deep pot (big enough to hold the rice and roasted chicken), spread a thin layer of oil or ghee on the bottom and place a heatproof rack or trivet if available. Put the partially cooked rice in the pot and level it. Place the roasted chicken on top of the rice. Pour 2–3 tablespoons of the reserved aromatic stock around the edge (do not pour directly over the rice to avoid sogginess).

Steam to finish cooking

Cover the pot tightly with a heavy lid or seal with foil. Cook over very low heat for 12–15 minutes to allow the rice to finish steaming and absorb chicken juices. This step melds flavors and makes the rice fluffy and aromatic.

Optional Smoky Aroma

Smoke the mandi

If you want authentic smoky flavor: heat the small charcoal piece until glowing (hold with tongs). Place a small heatproof bowl in the center of the rice or on a spoon inside the pot; put the charcoal on the bowl, drizzle 1 tsp ghee on the charcoal and immediately cover the pot tightly to trap smoke. Leave sealed for 5–8 minutes. Remove charcoal and bowl carefully before serving.

Final Garnish & Serve

Fluff and garnish

Carefully transfer rice to a serving platter and place the roasted chicken halves on top. Fluff rice gently with a fork to separate grains. Drizzle saffron-infused milk over the rice if using. Scatter toasted slivered almonds/pine nuts, fried onions, and chopped cilantro over the top. Serve immediately with lemon wedges on the side.
