Chana (Chickpea) Base
Soaking and cooking dried chickpeas
If using dried chickpeas: rinse 2 cups chickpeas thoroughly. Place in a large bowl, cover with at least 6 cups water and soak for 8 hours or overnight. Drain, rinse. Transfer to a large pot, add 6–8 cups fresh water and 1 tsp kosher salt. Bring to a boil, reduce to a simmer and cook until tender, 45–60 minutes. Reserve 1 cup of the cooking liquid, then drain excess water. If using canned chickpeas: drain and rinse 4 cups (two 15-oz cans) and set aside; reserve 1 cup water for sauce (use plain water if none reserved).
Tip: Pressure cooking (7–8 whistles) or Instant Pot (manual high 35–40 minutes from cold, natural release) speeds this step and yields tender beans.
Masala (Sauce)
Temper spices and sauté aromatics
Heat 3 tbs oil in a heavy pan over medium heat until shimmering. Add 1 tsp cumin seeds and fry 15–30 seconds until fragrant and sizzling. Add 1 cup finely chopped onion and a pinch of salt. Sauté, stirring occasionally, until golden brown and caramelized, about 8–10 minutes. Add minced garlic (4 cloves), minced ginger (1 tbs) and slit green chili; cook 1–2 minutes until raw aroma disappears.
Tomatoes and ground spices
Add 2 cups chopped tomatoes and 1 tbs tomato paste. Cook, stirring, until the tomatoes break down and oil begins to separate at the edges, about 8–10 minutes. Stir in 2 tsp ground coriander, 1 tsp ground cumin, 1 tsp turmeric, 1/2 tsp red chili powder, and 1/2 tsp sugar (if using). Cook 1–2 minutes to toast the spices.
Combine chickpeas with masala
Add the cooked or canned chickpeas to the masala and stir to coat. Pour in 1 cup reserved chickpea cooking liquid (or plain water) to reach a medium-thick consistency. Bring to a simmer, cover, and cook 8–12 minutes so flavors meld and sauce thickens slightly. Mash 1/2 cup of the chickpeas lightly with the back of a spoon to thicken the gravy.
Finish and season
Stir in 1 tsp garam masala and 1 tsp amchur (or 1 tsp lemon juice) and 1.5 tsp salt (adjust to taste). Simmer 1–2 minutes. Taste and adjust seasoning—add more salt, lemon, or sugar as desired. If sauce is too thin, simmer uncovered until reduced; if too thick, add a few tablespoons of reserved liquid and reheat.
Stir in 1/4 cup chopped fresh cilantro just before serving.
Garnish & Serving
Transfer chana masala to a serving bowl. Garnish with 2 tbsp fresh cilantro leaves and serve with lemon wedges on the side for squeezing over individual portions.
Serve hot with basmati rice, jeera rice, naan, or roti.
