Par-cook potatoes and cauliflower
Bring a medium pot of salted water to a boil. Add the cubed potatoes and boil for 5 minutes. Add cauliflower florets and boil together for 3 more minutes until both are just tender but not falling apart. Drain and set aside. (Alternatively, steam for 7–8 minutes.)
If using frozen peas, blanch them in the same boiling water for 1 minute, drain and set aside.

Heat oil or ghee in a large skillet or kadhai over medium heat. Once hot, add cumin seeds and let them sizzle for 10–15 seconds until fragrant.
Add finely chopped onion and sauté for 6–8 minutes, stirring occasionally, until soft and light golden.
Add minced garlic, ginger and chopped green chili. Sauté 1–2 minutes until raw smell disappears.
Stir in the chopped tomatoes (or tomato puree) and cook 5–7 minutes until tomatoes break down and oil starts to separate from the masala.

Lower the heat slightly and add turmeric, red chili powder, ground coriander and salt. Cook 1 minute, stirring constantly so the spices bloom but don't burn.
Add the par-cooked potatoes, cauliflower and peas to the masala. Toss gently to coat the vegetables with the spice-tomato mixture.
Pour in 1/2 cup water, cover the pan, and simmer on low for 6–8 minutes so the vegetables finish cooking and absorb the flavors. Stir once halfway through to prevent sticking.
Remove the lid, check seasoning and texture. If vegetables are too soft, cook uncovered a minute or two; if too dry, add 1–2 tablespoons water. Sprinkle garam masala and amchur (or lemon juice). Stir gently.
Finish & Serve
Adjust salt and spices to taste. Garnish with chopped cilantro and serve hot.
Serving suggestions: serve with steamed basmati rice, jeera rice, or Indian breads such as roti, naan or paratha.
