Preparation

  1. 1

    Marinate the Fish

In a bowl, mix the white fish pieces with lime juice, salt, and black pepper. Allow to marinate for about 20 minutes.

  2. 2

    Prepare the Vegetables

While the fish is marinating, slice the bell peppers, onion, and chop the tomatoes. Mince the garlic and set aside.

Cooking

  1. 3

    Sauté the Vegetables

In a large pot, heat the olive oil over medium heat. Add the sliced onions and cook until translucent, about 5 minutes. Then add the minced garlic, bell peppers, and cook for another 3-4 minutes.

  2. 4

    Add Tomatoes and Spices

Stir in the chopped tomatoes, paprika, and cumin. Cook for about 5 minutes until the tomatoes soften.

  3. 5

    Add Coconut Milk and Fish

Pour in the coconut milk and bring to a gentle simmer. Gently add the marinated fish to the pot, ensuring it is submerged in the broth.

  4. 6

    Simmer

Cover the pot and let the stew simmer for about 15-20 minutes, or until the fish is cooked through and flakes easily with a fork.

  5. 7

    Finish with Cilantro

Once the fish is ready, stir in the chopped cilantro and adjust seasoning with salt and pepper as needed. Serve hot.
