Preparation

1. Soak the Beans

Rinse the black beans under cold water and soak them in 6 cups of water overnight or for at least 8 hours.

2. Prepare the Meats

Cut the pork shoulder into large chunks. Slice the chorizo and smoked sausage into rounds. Cut the bacon into small pieces.

3. Mise en Place

Chop the onion, garlic, and bell pepper. Set all ingredients aside.

4. Cook the Bacon

In a large pot or Dutch oven, cook the bacon over medium heat until crispy. Remove and set aside, leaving the rendered fat in the pot.

5. Sauté Aromatics

In the same pot, add the chopped onion, garlic, and bell pepper. Sauté until the onion is translucent, about 5 minutes.

6. Brown the Meats

Add the pork shoulder chunks to the pot and brown on all sides. Then add the chorizo and smoked sausage, cooking for an additional 5 minutes.

7. Add the Beans and Water

Drain the soaked beans and add them to the pot along with the reserved soaking water. Stir in the paprika, cumin, bay leaves, and black pepper.

8. Simmer the Stew

Bring the mixture to a boil, then reduce the heat to low. Cover and let simmer for 1.5 to 2 hours until the beans and meats are tender. Stir occasionally and add water if necessary.

9. Season and Serve

Once cooked, remove the bay leaves. Taste and adjust seasoning with salt as needed. Serve hot, garnished with fresh cilantro and accompanied by rice or orange slices.
