Braised Short Ribs

Sear the Ribs

In a large pot, heat the olive oil over medium-high heat. Season the short ribs with salt and pepper, then sear them on all sides until browned. Remove and set aside.

Sauté the Vegetables

In the same pot, add onion, carrot, and celery. Sauté until softened, about 5 minutes. Add garlic and cook for another minute.

Deglaze the Pot

Pour in the red wine, scraping the bottom of the pot to release any browned bits. Allow the wine to reduce by half.

Braise the Ribs

Return the short ribs to the pot, add beef broth, bay leaves, and thyme. Bring to a simmer, cover, and cook on low heat for 2.5 to 3 hours until tender.

Polenta

Cook the Polenta

In a saucepan, bring water to a boil. Gradually whisk in the polenta, stirring constantly. Lower the heat and cook for 20-25 minutes until thickened, stirring frequently.

Finish the Polenta

Stir in butter, parmesan cheese, salt, and pepper until well combined and creamy.

Mushroom Sauce

Sauté the Mushrooms

In a skillet, melt butter over medium heat. Add sliced mushrooms and cook until browned, about 5-7 minutes. Stir in garlic and thyme, cooking for another 2 minutes.

Season the Sauce

Season with salt and pepper to taste. If desired, add some braising liquid from the ribs for extra flavor.
