Prepare Protein

Season or marinate
Pat your chosen protein dry. In a small bowl combine olive oil, lime juice, cumin, paprika, garlic powder, salt, and pepper. Rub the mixture evenly over the 3 oz portion of your selected protein. If using al pastor, add 1 tsp achiote paste and a splash of orange juice; if using chorizo, no extra marinade is required beyond the seasoning. Let rest 10–15 minutes at room temperature (or up to 1 hour refrigerated).

Cook chicken
For chicken thigh: Cook slices 2–3 minutes per side until internal temperature reaches 165°F (74°C) and exterior is golden. Let rest 2 minutes and slice into bite-sized pieces.

Cook chorizo
For fresh chorizo: Crumble and cook, stirring, 4–5 minutes until browned and cooked through. Drain excess fat if desired.

Finish carnitas
For pre-made carnitas: Warm shredded carnitas in the hot pan 1–2 minutes until heated through and edges begin to crisp.

Finish al pastor
For al pastor: Sear thin marinated slices 1–2 minutes per side until charred edges develop and pork is cooked through. Remove and rest briefly.
Warm Tortilla & Assemble

Add salsa and cheese: Spoon 1 tsp salsa (verde or roja) over the top and sprinkle optional 1 tsp crumbled queso fresco if using.

Finish & serve: Serve immediately with a lime wedge alongside for squeezing over the taco. Recommend a final pinch of flaky salt or a grind of black pepper to taste.
