Shrimp Preparation
Prepare the Batter
In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the Mexican lager beer until the batter is smooth and free of lumps.
Heat Oil
In a deep frying pan, heat the oil over medium-high heat until it reaches 350°F (175°C).
Fry the Shrimp
Dip each shrimp into the batter, allowing any excess to drip off. Carefully place them in the hot oil and fry for about 3-4 minutes or until golden brown. Remove and drain on paper towels.
Taco Assembly
Spiced Lime Sauce
Mix the Sauce
In a small bowl, combine mayonnaise, lime juice, chipotle sauce, garlic powder, and salt. Mix until well combined and smooth.
Pico de Gallo Preparation
Prepare Pico de Gallo
In a medium bowl, combine diced tomatoes, red onion, chopped cilantro, lime juice, and salt. Mix gently and set aside.
Rice and Beans
Serve the Rice and Beans
In a serving dish, combine the cooked rice and black beans. Garnish with chopped cilantro if desired.
