Prepare and season
If using raw sausage links, prick each a few times with a fork to prevent bursting. If using frozen or pre-cooked meatballs, thaw to refrigerator temperature before heating. Season sausages and meatballs lightly with salt and black pepper.
Pan-sear sausages
Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the sausage links and cook 4–6 minutes per side, turning frequently, until well browned on all sides and cooked through (internal temperature 160°F / 71°C for pork sausage). Remove sausages to a plate and tent with foil.
Brown meatballs
In the same skillet (add a touch more oil if needed), add the meatballs and brown on all sides, about 6–8 minutes total for raw meatballs. For pre-cooked meatballs, brown 3–4 minutes just to develop color. Ensure meatballs are cooked through (internal 160–165°F / 71–74°C). Remove and keep warm with the sausages.
Sauce & finishing
Simmer with proteins
Return the browned sausages and meatballs to the skillet, nestling them into the sauce. Cover partially and let simmer over low heat 8–12 minutes so flavors meld and proteins finish cooking through. If using fully cooked proteins, simmer 5–7 minutes just to heat through and infuse sauce flavor.
Finish and season
Taste the sauce and add salt if needed, and up to 1/2 teaspoon red pepper flakes if you want heat. Sprinkle 1/4 cup grated Parmesan over the proteins and sauce, stir gently if you prefer the cheese incorporated, or leave on top for serving. Stir in chopped parsley (2 tablespoons) for freshness.
For serving (optional)
To serve in rolls: split and toast hoagie rolls, place one sausage and one meatball (or two of the same) in each roll, spoon hot sauce over them and top with extra cheese and basil leaves. To serve over pasta: portion 1 cup cooked pasta per serving, place sausage & meatballs on top, ladle sauce, sprinkle with cheese and basil.
