Method
Cake Preparation
- 1
Melt the Chocolate
In a heatproof bowl, melt the dark chocolate and unsalted butter together over a pot of simmering water, stirring until smooth. Remove from heat and let cool slightly.
- 2
Prepare the Batter
In a separate bowl, whisk together the granulated sugar and eggs until light and fluffy. Add the vanilla extract and mix well. Gradually fold in the melted chocolate mixture until combined.
- 3
Add Dry Ingredients
Sift together the all-purpose flour and baking powder, then gently fold into the chocolate mixture until just combined.
- 4
Bake
Preheat your oven to 180°C (350°F). Pour the batter into a greased 9-inch round cake pan and bake for 25-30 minutes, or until a toothpick inserted comes out clean. Allow to cool in the pan for 10 minutes before transferring to a wire rack.
- 5
Make the Mousse
Once the cake is completely cool, prepare the mousse. Melt another 200 grams of dark chocolate and let it cool slightly. In a separate bowl, whip 300 ml of heavy cream until soft peaks form. Fold the melted chocolate into the whipped cream until fully combined.
- 6
Assemble the Cake
Place the cooled chocolate cake on a serving plate. Spread the chocolate mousse evenly over the top of the cake. Refrigerate for at least 2 hours to set.
- 7
Serve
Slice and serve chilled, garnished with chocolate shavings or fresh berries if desired.
