Preheat your oven to 350°F (175°C). In a large mixing bowl, whisk together flour, sugar, baking powder, and salt. In another bowl, cream the butter until smooth, then add eggs one at a time, stirring well after each addition. Add vanilla extract. Gradually mix in the dry ingredients until just combined. Fold in the chopped pecans.
Pour the batter into a greased 9x13 inch baking dish. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool completely in the dish.
In a saucepan, melt the butter over medium heat. Add the diced apples, brown sugar, cinnamon, and vanilla extract. Cook, stirring occasionally, until the apples are tender and the mixture is syrupy, about 10 minutes.
Once the cake is cool, cut it into squares and drizzle the warm apple cinnamon glaze over each piece. Serve with a scoop of vanilla ice cream on the side.
