Method
Prepare & Measure
Chill glass
If desired, chill a large rocks glass or tiki mug in the freezer for 5–10 minutes or fill it with ice to cool while you assemble the cocktail.
Measure and prepare all ingredients: 2 oz tequila, 1 oz light rum, 1 oz orange liqueur, 1 oz fresh lime juice, 1 oz fresh pineapple juice, 0.5 oz agave syrup, 0.25 oz orgeat, 0.5 oz fresh orange juice, 2 dashes Angostura bitters.
Mixing
Build in shaker
Add the tequila, light rum, orange liqueur, lime juice, pineapple juice, agave syrup, orgeat, and fresh orange juice to a cocktail shaker.
Add bitters & ice
Add 2 dashes of Angostura bitters, then fill the shaker with ice (enough to nearly full).
Shake
Shake vigorously for 12–15 seconds until the shaker is well-chilled and slightly frosted. This incorporates the ingredients and slightly dilutes the cocktail for balance.
Serve
Prepare glass
If you chilled your glass with ice, discard that ice. Fill the chilled rocks glass or tiki mug with fresh crushed ice (about 1 cup).
Strain
Double-strain the shaken mixture over the crushed ice using a Hawthorne strainer and a fine mesh strainer to remove pulp and small ice shards for a smooth finish.
Garnish & finish
Garnish with a lime wheel on the rim, a pineapple leaf or wedge tucked into the ice, and a maraschino cherry on top. Optionally, add one more drop or very thin rinse of Angostura bitters over the top for aroma.
Serve immediately with a short straw. Sip and enjoy the tropical, tequila-forward Tiki Rita.
