Prepare strawberries

Wash strawberries thoroughly in a colander under cool running water to remove dirt. Drain and pat dry with paper towels.

Hull strawberries: remove the green cap and white core using a paring knife or strawberry huller. Discard hulls or save for infusing water.

Slice

Slice larger berries into 1/4-inch (6 mm) slices. Leave small berries whole or halved if preferred for a mix of textures.

Macerate (sweeten) strawberries

Combine the granulated sugar and water in a small bowl and stir until sugar is mostly dissolved to form a light syrup.

Stir in the lemon juice to brighten the flavors and balance sweetness.

Pour the syrup over the sliced strawberries. Gently toss with a rubber spatula or spoon to coat evenly.

Let the strawberries sit at room temperature for 15–30 minutes (or refrigerate up to 2 hours) so they release their juices and become glossy and slightly softened.

Serve and finish

Taste the macerated strawberries. If you want more acidity, stir in the teaspoon of balsamic vinegar and let sit 5 minutes. If using black pepper, add a small pinch and taste — pepper is optional but brings out complexity.

If serving with cream or yogurt: spoon the macerated strawberries and their juices over individual portions of heavy cream (lightly whipped) or Greek yogurt. Garnish with torn mint leaves.

For simple serving: transfer strawberries and juices to a serving bowl, garnish with mint, and serve with shortcake, pancakes, toast, ice cream, or on their own.

Store leftovers in an airtight container in the refrigerator for up to 2 days. The fruit will continue to soften as it sits.
