Prepare produce
Wash and spin-dry the mixed salad greens thoroughly. Core the apple, then slice thinly (leave skin on for color). Halve the cherry tomatoes. If using fresh corn, shuck and slice kernels from the cob; if using frozen, thaw and drain well.
Measure out the raisins and almonds. If almonds are not toasted, heat a small skillet over medium heat and toast the slivered almonds, stirring, for 2–4 minutes until fragrant and lightly golden; transfer to a plate to cool.
In a large mixing bowl, combine the mixed greens, sliced apple, corn, halved tomatoes and raisins. Gently fold to combine, keeping apple and avocado pieces on top for presentation until dressings are added.
Champagne Vinaigrette
Make the vinaigrette
In a small bowl or jar, combine the champagne vinegar, minced shallot, Dijon mustard and honey. Whisk to blend. Slowly stream in the extra-virgin olive oil while whisking (or put jar lid on and shake vigorously) until the dressing emulsifies and thickens slightly.
Season the dressing with sea salt and freshly ground black pepper, taste and adjust sweetness or acidity with a little extra honey or a teaspoon of lemon juice or vinegar if needed.
Assemble & Finish
Just before serving, pour about 3–4 tablespoons of vinaigrette over the large bowl of salad (use less for a half portion). Gently toss the salad with tongs to coat ingredients evenly, being careful not to mash the avocado.
Top the tossed salad with the diced avocado and toasted slivered almonds. Add a final sprinkle of extra almonds if desired and a light grind of black pepper.
Serve immediately. Provide additional vinaigrette on the side for guests who want extra dressing.
