Meat (sausage patties or bacon)

Cook sausage patties

Heat a skillet over medium heat. Add 1 tsp vegetable oil if skillet is dry. Place two sausage patties in the pan, cook 4–5 minutes per side until well browned and internal temperature reaches 160°F (71°C). Reduce heat if they brown too fast. Keep warm on low heat while you cook eggs.

OR Cook bacon

Arrange 3 slices of bacon in a cold skillet without overlapping. Turn heat to medium and cook 3–5 minutes per side for medium crispness, adjusting time for desired doneness. Transfer to paper towels to drain and keep warm.

General prep

Bring eggs to room temperature for a few minutes if possible. Preheat a nonstick skillet over medium-low heat and add 1 tablespoon butter.

Fried (Sunny-side or Over-easy/medium/well)

For sunny-side: crack eggs into the pan, cook gently 2–3 minutes until whites are set but yolks still runny; season with 1/8 tsp black pepper and 1/4 tsp salt. For over-easy/medium/well: when whites are set, carefully flip each egg with a spatula and cook 10–20 seconds for over-easy, 30–45 seconds for over-medium, or 1–2 minutes for over-hard. Adjust seasoning.

Scrambled

Crack eggs into a bowl, whisk until blended. Pour into melted butter over low-medium heat. Stir gently with a spatula, pulling curds from the edges into the center until soft and just set (about 2–3 minutes). Season to taste.

Poached

Bring a pot of water to a gentle simmer, add 1 tsp vinegar (optional). Crack an egg into a small cup, create a gentle whirlpool and slip the egg in. Cook 3 minutes for a runny yolk, 4 minutes for slightly firmer. Remove with a slotted spoon and drain on a paper towel; season.

Side - Fruit

If serving fruit: rinse and cut fruit as needed. Combine 1 cup mixed fruit in a bowl, toss with 1/2 tsp lemon juice if desired to brighten flavors. Chill briefly or serve immediately alongside eggs and meat.

Side - Salad

If serving salad: place 1 cup mixed greens in a bowl, add halved cherry tomatoes and sliced cucumber. Whisk together 1 tsp olive oil, 1/2 tsp red wine vinegar, 1/8 tsp salt and a pinch of black pepper; toss with greens just before serving.

To Serve

Plate two eggs your chosen way, add cooked sausage patties or bacon, and a side of fruit or the salad. Add toast or an English muffin with butter if desired. Serve immediately.
