Form and season patty

Gently form the 1/2 lb ground beef into a patty about 3/4"–1" thick and slightly wider than the bun. Do not overwork the meat. Make a shallow dimple in the center with your thumb to reduce doming while cooking. Season both sides with kosher salt and freshly ground black pepper just before cooking.

Preheat pan or grill

Preheat a cast-iron skillet or grill over medium-high heat until very hot (about 3–5 minutes). If using a skillet, add a light film of neutral oil and heat until shimmering.

Cook patty

Place the patty on the hot surface. Cook undisturbed for 3–4 minutes to develop a brown crust. Flip and cook 3–4 minutes more for medium (adjust 1–2 minutes per side for desired doneness). During the last 1 minute of cooking, place the American cheese slices on top of the patty and cover the pan with a lid or tent with foil to melt the cheese.

Toast bun

While the patty finishes, spread softened butter on the cut sides of the brioche bun. Toast cut-side down on a separate pan or on the grill until golden and slightly crisp, about 1–2 minutes.

AmSo sauce

Combine mayonnaise, ketchup, yellow mustard, diced dill pickle (or relish), apple cider vinegar, smoked paprika, hot sauce (if using), and a pinch of salt in a small bowl. Whisk until smooth and taste; adjust seasoning. Chill if making ahead. Yield is about 1/3 cup—enough for the burger.

Prepare LTO

Rinse and dry lettuce leaves. Slice tomato into 1/4" slices and season lightly with salt. Thinly slice red onion and separate into rings. Set aside.

Fry egg

In a small nonstick skillet, heat 1 tsp neutral oil over medium. Crack in the egg and cook until whites are set but yolk is still runny (about 2–3 minutes) for sunny-side up. For over-easy, cook 1–2 minutes then flip carefully and cook 15–30 seconds. Season with a pinch of salt and a grind of black pepper. Remove from heat.

Assemble

Spread a generous tablespoon of AmSo sauce on the bottom bun. Place lettuce leaf(s) on the sauce to protect the bun from juices. Add the cheeseburger patty on top of the lettuce. Layer tomato slices and red onion rings over the patty. Place the fried egg on top of the onions. Spread a little AmSo sauce on the top bun (optional) and close the burger. Serve immediately.
