Prepare dough

If using store-bought pre-shaped soft pretzel dough, remove from packaging and let rest at room temperature for 15–20 minutes. If using homemade dough, divide into 8 equal pieces and roll each into an 18-inch rope, then shape into a classic pretzel or bite-sized twists.

Preheat oven

Preheat oven to 425°F (220°C). Line two baking sheets with parchment paper or silicone mats and set aside.

Make baking soda bath

In a large, wide pot, bring 8 cups warm water to a gentle simmer. Carefully stir in 2 cups baking soda (the mixture will foam slightly). Keep at a low simmer — do not boil vigorously.

Boil pretzels briefly

Working 2–3 pretzels at a time, gently lower shaped dough into the baking soda bath for 20–30 seconds per side (about 45–60 seconds total). Use a slotted spatula to remove each pretzel and let excess water drip back into the pot. Return to the prepared baking sheet, spacing them about 1–2 inches apart.

Egg wash and salt

Beat 1 egg with 1 tablespoon water to make an egg wash. Brush each pretzel lightly with egg wash, then sprinkle coarse sea salt evenly over the tops. For softer, richer pretzels, brush once baked with 2 tablespoons melted unsalted butter.

Bake

Bake pretzels on the middle rack for 12–15 minutes, until deep golden brown. Rotate pans halfway through baking for even color.

Finish

Remove pretzels from oven. If using melted butter, brush each pretzel right away for shine and extra flavor. Transfer to a cooling rack for 5 minutes before serving.

Combine base

In a medium bowl, whisk together 1 cup mayonnaise and 1 cup sour cream until smooth.

Add buttermilk and seasonings

Stir in 1 cup buttermilk to reach a creamy but dippable consistency. Add 2 tsp dried parsley, 1 tsp dried dill, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp fine sea salt, 1 tsp black pepper, and 1 tsp fresh lemon juice. Mix until evenly incorporated.

Adjust and add fresh herbs

Taste and adjust salt, pepper, or lemon juice to preference. Fold in 1 tbsp minced fresh chives if using. If you prefer a thinner dip for dunking pretzels, add additional buttermilk 1 tbsp at a time until desired consistency is reached.

Chill

Cover and refrigerate the ranch for at least 30 minutes to let flavors meld (recommended 1–2 hours). Bring to near-room temperature before serving if chilled longer, or stir well and serve cold depending on preference.
