Prepare cheese

Trim and salt

If not pre-cut, cut low-moisture mozzarella into 12 uniform sticks about 3/4" x 3/4" x 3.5". Pat each stick dry with paper towels to remove surface moisture. Lightly sprinkle each stick with the 1/2 tsp salt and gently roll so salt distributes; this helps flavor the center.

Freeze briefly

Place the prepared cheese sticks on a parchment-lined tray in a single layer and freeze for at least 30 minutes (up to 2 hours). Freezing firms the cheese so it releases less when frying.

Make breading and set up stations

Line three shallow bowls or pie plates: one for flour, one for egg wash, one for breadcrumb mixture. In the flour bowl, add the 1 cup flour and set aside.

In the egg wash bowl, whisk together 3 large eggs and 3 tablespoons whole milk until smooth.

In the breadcrumb bowl, combine 2 cups breadcrumbs, 1/4 cup grated Parmesan, 1 teaspoon dried Italian seasoning, 1/2 teaspoon garlic powder, 1/4 teaspoon onion powder, 1 teaspoon kosher salt, and 1/2 teaspoon black pepper. Mix to evenly distribute seasonings.

Optional reinforcement: in a small bowl, whisk 1/2 cup cornstarch with 2 tablespoons cold water to form a loose slurry. This will be used for a second dry-dip to help the coating adhere and reduce cheese leakage.

Breading the mozzarella sticks

Remove 2–3 cheese sticks from the freezer at a time to keep the rest cold. Dredge a stick first in flour, shaking off excess so the surface is evenly coated.

Dip the floured stick into the egg wash, making sure it is fully coated. Allow excess egg to drip back into the bowl.

If using the cornstarch slurry: quickly roll the egg-coated stick in the cornstarch so a thin dry layer forms. (If not using, skip this step and proceed to breadcrumbs.)

Press the stick into the breadcrumb mixture, coating all sides. For a thicker, more secure crust, repeat the egg wash and breadcrumb steps for a double coating. Place breaded sticks on a baking sheet lined with parchment and return to freezer for at least 20–30 minutes to firm again.

Frying

Pour oil into a heavy-bottomed pot or Dutch oven to reach about 2–2.5 inches deep (about 4 cups). Attach a thermometer and heat oil to 350°F (177°C). Maintaining correct temperature is key—too hot will brown outside before cheese melts; too cool will cause greasier sticks.

Working in small batches (3–4 sticks), carefully add frozen breaded sticks to the hot oil. Fry, turning gently with a slotted spoon or spider, until golden brown, about 1 to 1.5 minutes per side. Total fry time should be ~2–3 minutes. Do not overcrowd the pot; keep oil temperature between 325–350°F by adjusting heat as needed.

Use a slotted spoon to transfer fried mozzarella sticks to a wire rack set over a baking sheet or to paper towels to drain briefly. Let cool for 1–2 minutes before serving — this prevents burning and allows the cheese to set slightly so it doesn't spurt out when bitten.

Serving

Arrange mozzarella sticks on a platter with a small bowl of warmed marinara sauce for dipping. Serve immediately while hot and melty.
