Warm or Fry Tortillas
If you prefer soft mini tacos: heat a dry skillet over medium-high and warm tortillas 20–30 seconds per side until pliable, stacking them in a towel to keep warm. For crisp mini taco shells: pour 1/4 cup vegetable oil into a sauté pan and heat over medium-high until shimmering (about 350°F if using a thermometer). Fry each tortilla for 20–30 seconds per side until crisp and lightly golden. Drain on paper towels. Repeat with remaining tortillas.
Keep the warm or fried tortillas covered with a towel so they stay pliable (if warmed) or crisp (if fried) while you finish the filling and toppings, and arrange on a serving platter for assembly.
Place lime wedges, crumbled cotija, chopped cilantro, and pickled onions in small bowls for guests to top their mini tacos as desired.
Protein Filling
Heat 1 teaspoon olive oil in a large skillet over medium heat. Add the finely diced onion and sauté 3–4 minutes until softened and translucent.
Add the minced garlic and cook 30 seconds until fragrant, stirring so it doesn’t brown.
Increase heat to medium-high and add the ground beef (or chosen protein) to the skillet. Break it up with a spatula and cook until browned, about 5–7 minutes.
Stir in chili powder, ground cumin, smoked paprika, dried oregano, salt, and black pepper. Cook 1 minute to toast the spices.
Add the tomato paste and stir until it coats the meat. Pour in 1/4 cup broth (or water), reduce heat to medium-low, and simmer 3–4 minutes, scraping any browned bits from the pan. The mixture should be moist but not soupy; add an extra tablespoon of broth only if needed.
Taste and adjust seasoning. Keep the filling warm while you assemble the tacos.
Fresh Toppings & Sauce
Make quick crema sauce: in a small bowl, mix the sour cream (or crema) with hot sauce or salsa verde and 1/4 teaspoon salt. Stir until smooth; adjust hot sauce to taste.
Assemble each mini taco: place about 1 tablespoon of the warm meat filling onto each tortilla, top with a small pinch of shredded cabbage, a couple of tomato quarters, a few cilantro leaves, a sprinkle of cotija, and a drizzle of crema. Squeeze a lime wedge over each taco before serving.
Serve immediately while shells are warm/crisp. Provide extra lime wedges, hot sauce, and pickled onions at the table.
