Mix dry ingredients

In a medium mixing bowl, whisk together 1 cup yellow cornmeal, 1 cup all-purpose flour, 2 tablespoons granulated sugar, 1 teaspoon baking powder, 1/2 teaspoon baking soda, and 1/2 teaspoon salt until evenly combined.

Combine wet ingredients

In a separate bowl, beat 1 large egg lightly. Stir in 1 cup buttermilk, 2 tablespoons milk, and 1 teaspoon vegetable oil until blended.

Make batter

Pour the wet mixture into the dry ingredients and stir just until combined. The batter should be thick enough to coat a sausage — if it seems too thick, add up to 1 tablespoon more milk; if too thin, add 1 tablespoon flour. Let the batter rest 10 minutes at room temperature to hydrate the cornmeal.

Prepare sausages

Pat 24 cocktail sausages dry with paper towels. Insert a wooden toothpick or small skewer into the center of each sausage, leaving a handle of about 1.5 inches. For better batter adhesion, lightly score each sausage lengthwise with a shallow cut (optional).

Coat sausages

Pour batter into a tall narrow container (a pint glass works well) to make dipping easier. Holding a sausage by the stick, dip it into the batter to coat evenly, turning to cover all sides. Allow excess batter to drip back into the container. If you prefer thicker coating, double-dip: dip once, let set 30 seconds, then dip again.

Heat oil

Pour about 6 cups vegetable oil into a heavy pot or deep fryer to a depth of 2–3 inches. Heat oil to 350°F (175°C). If you don't have a thermometer, test by dropping a small dollop of batter into the oil — it should sizzle and rise to the surface within a few seconds and turn golden in about 45–60 seconds.

Fry mini corn dogs

Fry the battered sausages in batches of 4–6 to avoid overcrowding. Gently lower each coated sausage into the hot oil using tongs, maintaining the stick as a handle. Fry 2.5–3.5 minutes, turning once if needed, until the exterior is golden brown and the sausage is heated through. Adjust time slightly depending on sausage size and oil temperature.

Drain and keep warm

Using a slotted spoon or tongs, transfer cooked mini corn dogs to a wire rack set over a baking sheet or a plate lined with paper towels to drain. Keep cooked batches warm in a 200°F (95°C) oven while you finish frying the rest.

Serve mini corn dogs warm with mustard and ketchup or other dipping sauces. For best texture, consume within 30 minutes; leftover corn dogs can be reheated in a 375°F (190°C) oven for 8–10 minutes to restore crispness.
