Burger Patties

Mix and form patties

Place the ground beef in a large bowl. Sprinkle the kosher salt, freshly ground black pepper, onion powder, garlic powder, and Worcestershire sauce over the meat. Gently mix with your hands or a spoon until just combined — avoid overworking the meat. Divide into 6 equal portions (about 4–5 oz each). Form each portion into a patty about 3/4 inch thick, making a shallow dimple in the center of each patty with your thumb (this helps prevent doming while cooking).

Rest patties

Place the patties on a tray, cover loosely with plastic wrap, and refrigerate for at least 15 minutes (up to 1 hour) to help them hold their shape while cooking.

Cook patties

Preheat a grill or heavy skillet over medium-high heat. Brush the grill grates or skillet lightly with vegetable oil to prevent sticking. Place the patties on the hot surface, dimple-side up. Cook for 3–4 minutes without moving to develop a crust. Flip once and cook another 3 minutes for medium-rare to medium (internal temperature ~135–145°F / 57–63°C). In the last 1 minute of cooking, place a slice of cheddar on each patty and close the grill lid or cover the skillet to melt the cheese. Adjust cook time 1–2 minutes longer for medium-well to well-done. Remove patties to a plate and tent loosely with foil; rest for 3–5 minutes.

Buns & Cheese

While the patties rest, split the buns and lightly butter the cut sides. Toast on the grill or in a skillet for 1–2 minutes until golden and lightly crisp. Keep warm.

Prepare vegetables

Slice the tomato into 6 even slices. Thinly slice the red onion into rings and separate. Rinse and pat dry the lettuce leaves. Arrange pickles in a small bowl.

Mix mayonnaise (optional flavored mayo)

In a small bowl combine the mayonnaise, salt (1/4 tsp), and black pepper (1/8 tsp). Mix until smooth. Taste and adjust seasoning or add hot sauce if using. Transfer ketchup and mustard to serving containers or squeeze bottles for the event.

Assemble: place a lettuce leaf on the bottom bun, add the cheese-topped burger patty, then tomato slice, onion rings, and pickles. Spread ketchup, mustard, and/or mayo on the top bun as desired. If using bacon or avocado, add them on top of the cheese before the tomato.

Optional Extras

If serving bacon, cook until crisp in a skillet over medium heat (about 6–8 minutes), drain on paper towels, and keep warm. Slice avocado just before serving to avoid browning; season lightly with salt and a squeeze of lemon if available.

Service & Holding

Keep cooked patties loosely tented in a warm oven (about 170°F / 75°C) for up to 30 minutes if needed for service. Keep buns wrapped to retain warmth. Arrange toppings and condiments at the serving table so event guests can customize their burgers.
