Form Patties

Divide the ground beef into four equal portions (about 4 oz each). Gently shape each portion into a patty about 3/4 inch thick and slightly wider than the buns. Do not overwork the meat — handle lightly so patties stay tender. Use your thumb to make a shallow dimple in the center of each patty to reduce puffing while cooking.

Season both sides of the patties evenly with the kosher salt, freshly ground black pepper, and brush or sprinkle 1/4 tsp Worcestershire on each side (total 1 tsp). Let the patties rest at room temperature for 10 minutes while you prepare the grill or pan.

Heat a heavy skillet (cast iron preferred) or grill over medium-high heat until very hot. Add 1 tablespoon neutral oil to the pan and swirl to coat if using a skillet. When the oil is shimmering, add the patties without crowding (work in batches if needed).

Cook the patties 3 to 4 minutes on the first side without pressing. Flip once and cook another 3 minutes for medium-rare to medium (internal temperature about 130–140°F / 55–60°C). For medium-well, cook 4–5 minutes after flipping. Adjust cook time to your preferred doneness.

About 1 minute before the patties are done, place a slice of cheese on each patty. Cover the pan with a lid or close the grill to melt the cheese (about 30–60 seconds). Remove the patties to a plate and tent loosely with foil to rest 2–3 minutes.

Toast buns: While patties rest, spread softened butter evenly on the cut sides of the buns. Place buns cut-side down on the hot skillet or grill for 30–60 seconds until golden and lightly crisp. Remove and keep warm.

Assemble condiments: Spread 1 teaspoon mayonnaise on the top half of each bun, 1 teaspoon ketchup and about 1/2 teaspoon mustard on the bottom half (adjust to taste).

Build the burger: On each bottom bun, place lettuce leaf, tomato slice(s), then the hot cheeseburger patty, add two dill pickle slices and a few thin red onion slices. Top with the bun top that has mayonnaise spread on it.

Serve immediately with optional fries or a simple salad. Provide extra ketchup, mustard, and pickles on the side if desired.
