Grilled Cheese Sandwich

Prepare the Bread

Take 4 slices of bread and lay them out on a clean surface.

Add Cheese

Place 2 slices of cheddar cheese on 2 of the bread slices.

Assemble Sandwich

Top the cheese with the remaining 2 slices of bread to form 2 sandwiches.

Butter the Bread

Spread 1 tablespoon of butter on the outer side of each sandwich.

Grill the Sandwich

Heat a skillet over medium heat and place the sandwiches in the skillet. Grill for about 3-4 minutes on each side until golden brown and the cheese is melted.

Prepare the Ingredients

Chop the onion and mince the garlic.

Sauté the Onion and Garlic

In a pot, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and sauté for another minute.

Add Tomatoes and Broth

Add the canned tomatoes and vegetable broth to the pot. Stir to combine.

Season the Soup

Add salt, pepper, and dried basil. Stir well and bring to a simmer.

Cook the Soup

Let the soup simmer for about 15-20 minutes to allow the flavors to meld.

Blend the Soup

Use an immersion blender to puree the soup until smooth. Alternatively, carefully transfer to a blender and blend in batches.

Serve

Serve the tomato soup hot alongside the grilled cheese sandwiches.
