Prepare the Shrimp
In a bowl, combine the flour, Cajun seasoning, salt, and pepper. Dredge the shrimp in the flour mixture, dip in the beaten egg, and then coat with cornmeal.
Fry the Shrimp
In a large skillet, heat the oil over medium-high heat. Fry the shrimp in batches until golden brown and cooked through, about 2-3 minutes per side. Remove and drain on paper towels.
Assemble the Po' Boy
Slice the French bread rolls lengthwise, leaving one side attached. Spread a generous amount of remoulade sauce on the inside of the bread. Layer with shredded lettuce, sliced tomatoes, fried shrimp, and pickled shallots.
Serve
Close the sandwich and serve immediately while hot. Enjoy your Shrimp Po' Boy!
