Prepare the Napa Slaw

In a bowl, combine shredded napa cabbage, shredded carrots, chopped cilantro, and lime juice. Toss together and set aside to marinate.

Prepare the Fish

Season the flounder fillets with the spicy adobo seasoning and a pinch of salt. Prepare the tempura batter according to package instructions using cold water.

Fry the Fish

Heat oil in a deep frying pan over medium-high heat. Dip each seasoned flounder fillet into the tempura batter, then carefully place into the hot oil. Fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

Assemble the Tacos

Warm the corn tortillas in a skillet or microwave. Place a few pieces of fried flounder on each tortilla, top with napa slaw, and drizzle with chipotle mayo.

Serve immediately with lime wedges on the side.
