Prepare preserved lemon and citrus

Remove the pulp from the preserved lemons and finely chop just the rind. In a small bowl, combine the chopped preserved lemon rind with lime juice, lemon juice, granulated sugar and cold water. Stir vigorously until the sugar dissolves — about 1–2 minutes. Add fine sea salt and stir to combine. Taste and adjust: the mixture should be bright, tangy and slightly salty to balance sweetness.

Macerate

Let this citrus-preserved lemon mixture sit at room temperature for 10 minutes to allow flavors to marry and for the preserved lemon oils to infuse the juices.

Pomegranate & flavoring

Muddle pomegranate

Place the pomegranate arils in a sturdy jar or bowl and lightly muddle with the back of a spoon or muddler until they release some juice but are not completely pulverized (about 10–15 gentle presses).

Combine with molasses and spices

Add the pomegranate molasses, black salt (or regular salt), and ground roasted cumin (if using) to the muddled arils. Stir to combine. Strain the mixture through a fine mesh sieve into the citrus base, pressing on solids to extract juice and leaving most seeds behind. You should get a deeply colored, balanced syrupy juice. Discard solids.

Adjust sweetness & seasoning

Taste the combined mixture and, if needed, add up to 1 tablespoon additional sugar or 1 tablespoon additional pomegranate molasses to reach your preferred balance of sweet/tart/salty.

To serve

Assemble glasses

Divide ice cubes among 6 tall glasses (about 1/2 cup ice per glass). Add 1–2 fresh mint leaves and one lime slice to each glass.

Portion base

Shake or stir the prepared shikanji base (the combined citrus + pomegranate mixture) to recombine. Pour about 1/3 cup (80 ml) of the base into each prepared glass.

Top with soda

Top each glass with about 2/3 cup (160 ml) chilled soda water to fill. Stir gently once to integrate. Taste and adjust: if too strong, add more soda; if too weak, add 1 tablespoon extra base.

Garnish & serve

Garnish each glass with a sprinkle of pomegranate seeds and a small mint sprig. Serve immediately with a straw or stirring spoon.

Make-ahead notes

The preserved lemon–pomegranate base can be made up to 48 hours ahead and refrigerated in a sealed container. Add soda water only just before serving to maintain fizz.
