Rinse and soak rice

Place 2 cups basmati rice in a fine-mesh sieve and rinse under cold running water until the water runs clear. Transfer rice to a bowl and cover with 3 cups cold water. Soak for 20–30 minutes, then drain thoroughly in the sieve for a few minutes.

Bloom saffron

Place 1 teaspoon saffron threads in a small heatproof dish and pour 3 tablespoons hot (not boiling) water over them. Let sit 10–15 minutes until color and aroma release.

Prepare aromatics and whole spices

While rice soaks, peel and thinly slice 1 cup onion, mince 3 cloves garlic and grate 1 tablespoon ginger. Lightly crush 6 cardamom pods to open them; keep 4 whole cloves, 1 cinnamon stick, 1 bay leaf and 1 teaspoon cumin seeds ready.

Sauté onions and spices

In a heavy-bottomed wide pot or Dutch oven, heat 3 tablespoons vegetable oil and 1 tablespoon butter over medium heat until shimmering. Add 1 teaspoon cumin seeds and let them sizzle 10–15 seconds. Add the crushed cardamom pods, 4 cloves, cinnamon stick and bay leaf; sauté 30 seconds until fragrant. Add the sliced onions and a pinch of salt and cook 8–10 minutes, stirring occasionally, until onions are soft and beginning to caramelize.

Add garlic, ginger and turmeric

Stir in the minced garlic and grated ginger and cook 1 minute until fragrant. Sprinkle 1 teaspoon ground turmeric and continue to cook 30 seconds to release its aroma.

Toast rice

Increase heat to medium-high, add the drained rice to the pot and gently stir to coat every grain in the spiced oil/butter mixture. Toast the rice for 1½–2 minutes, stirring carefully so it does not break.

Add liquid, saffron and salt

Pour 3¼ cups warm water or low-sodium stock into the pot. Add 1¾ teaspoons salt and the saffron with its soaking liquid (pour the threads in as well). Stir once to combine, cover the pot with a tight-fitting lid, reduce heat to low and bring to a gentle simmer for cooking.

Cook rice by absorption

Cook covered on low for 12–15 minutes without lifting the lid (after first gentle simmer) until all liquid is absorbed and rice is tender. If your pot runs hotter, check at 10 minutes to avoid scorching.

Rest and finish

Turn off the heat and let the pilau rest, covered, for 10 minutes to steam. Remove the whole spices (cinnamon stick, bay leaf and cardamom shells if desired) with a fork. Gently fluff the rice with a fork to separate grains; fold in 2 tablespoons chopped fresh cilantro, 1/2 cup fried or caramelized onions and 2 tablespoons toasted slivered almonds or pistachios if using. Adjust salt to taste.

Serve

Spoon the saffron pilau into a warm serving dish. Garnish with a few extra saffron threads or a sprinkle of chopped cilantro. Serve hot alongside Ma ki Dal, Baingan ka Bharta, Shakarkand Saag and warm breads (Ajwaini Warqi Naan and Onion & Cheese Kulcha).

Accompaniments

Reheat prepared Ma ki Dal, Baingan ka Bharta and Shakarkand Saag gently on the stovetop or in a covered pan until hot (5–10 minutes). If dal is too thick, loosen with a splash of hot water and adjust seasoning (salt, lemon) to taste.

Warm Ajwaini Warqi Naan and Onion & Cheese Kulcha in a preheated oven at 180°C (350°F) for 4–6 minutes, or on a hot skillet 1–2 minutes per side until warmed through and slightly blistered. Keep wrapped in a clean towel to stay soft.

Arrange pilau on a platter with bowls of the dal, bharta and saag around it. Place warm naans and kulchas in a bread basket. Serve immediately so breads remain hot and pilau fragrant.
