Kala Chana Salad
Soak and Cook Kala Chana
Rinse 1 cup dried kala chana under cold water until water runs clear. Transfer to a bowl and cover with 600 ml fresh water. Soak for 8 hours or overnight. Drain and rinse. Put soaked chana in a pot or pressure cooker, add 600 ml fresh water, 1 bay leaf and 1 tsp salt. If using a pressure cooker, cook for 12–15 minutes on medium until tender but not mushy (about 3–4 whistles). If using a pot, simmer for 45–60 minutes until tender. Drain and reserve 2–3 tbsp cooking liquid.
Toss Salad
In a large mixing bowl combine the cooked and cooled kala chana (about 2 cups cooked), diced tomato, cucumber, sliced onion, minced green chili and chopped cilantro. Add 2 tbsp lemon juice, 1 tsp roasted cumin powder, 1 tsp chaat masala, 1/2 tsp black salt, 1/2 tsp red chili powder and 1 tsp olive oil. Toss gently to combine. Taste and adjust seasoning with additional lemon or salt. If the mixture seems dry, add 1–2 tbsp reserved cooking liquid or 1 tbsp yogurt for creaminess (optional).
Paan Patta Dressing & Assembly
Make Paan Patta Paste
Stem and wash 6 medium betel leaves thoroughly to remove grit. Pat dry. In a blender or mortar & pestle add the betel leaves, 1/4 cup fresh mint leaves, 1/4 cup cilantro stems, 2 tbsp grated coconut, 1 tsp jaggery (or brown sugar), 1 tbsp tamarind date chutney and a pinch of salt. Add 1–2 tbsp water or 2 tbsp whisked yogurt if using to help blend. Pulse to a smooth but slightly coarse paste. Scrape down sides and adjust for balance: sweeter with a touch more jaggery, tangier with more chutney, or thinner with a tablespoon more water or yogurt.
Prepare Garnishes
Coarsely crush 2 tbsp roasted peanuts. If using pomegranate seeds, measure 2 tbsp. Warm the chaat slightly if desired, then set aside to cool a little before combining with fresh dressing so leaves keep color and flavor.
Combine and Plate
Fold 3 tbsp of the paan patta paste into the kala chana salad, mixing thoroughly so the flavors coat the chana and vegetables. Reserve the remaining paste for drizzling. Spoon the dressed kala chana into a shallow bowl or onto small plates for Course One. Drizzle an additional 1 tsp tamarind date chutney and the remaining paan paste over the top in a decorative pattern. Sprinkle the crushed roasted peanuts and 2 tbsp pomegranate seeds across each portion. Finish with a small shower of chaat masala (optional) and an extra squeeze of lemon to taste.
Serving Suggestion
Serve immediately so the paan leaves keep their fresh aroma and the chana retains some bite. This chaat works as a small first-course or appetizer (Course One). Leftovers: store dressing separately and consume kala chana within 24–36 hours refrigerated.
