Make the masala

In a small bowl combine amchoor, ground cumin, ground coriander, black salt and (if using) red chili powder. Mix thoroughly so the powders are uniform. Taste a tiny pinch and adjust salt/amchoor to balance tanginess and saltiness. Set aside.

Prepare Glasses

Take two serving glasses. Rim the outside/top edge (optional): moisten the rim lightly with a lime wedge, then dip the rim into a shallow plate with a light dusting of the spice mix to coat. This gives a spiced aroma with each sip.

Divide crushed ice between the two glasses (about 1 cup ice per glass). If you prefer less dilution, use ice cubes instead.

Assemble Drink

Sprinkle about half of the prepared spice mix evenly over the ice in the two glasses (about 1/2 tsp spice mix per glass). This places the masala in contact with the drink while leaving some for finishing.

Pour 8 oz (about 1 cup) well-chilled Thums Up into each glass over the ice. Pour gently to preserve carbonation.

Finish and balance

Add 3/4 tbsp fresh lime juice to each glass (total 1.5 tbsp divided). Stir gently once or twice with a long spoon to lift spice into the cola without flattening it. Taste and, if desired, add a light sprinkle of the remaining spice mix (about 1/4 tsp per glass) or an extra squeeze of lime for more tang.

Garnish each glass with a lime wedge on the rim and 3 mint leaves on top (smacked lightly between your palms first to release aroma). Serve immediately while cold and fizzy.
