Bloom saffron

Place saffron strands in the warm water and let sit 5–10 minutes to release color and aroma.

Warm milk

In a heavy-bottomed saucepan, combine whole milk and crushed cardamom pods. Warm over medium heat until it just begins to steam and small bubbles form at the edges (do not boil), about 6–8 minutes, stirring occasionally so milk does not scorch.

Dissolve jaggery

Reduce heat to low. Add grated jaggery and a pinch of salt to the warm milk. Stir continuously until jaggery is fully dissolved and the milk has taken on a light brown hue, about 2–3 minutes. Taste and adjust sweetness if necessary.

Thicken custard

In a small bowl, mix cornstarch with 1 tablespoon cold milk to make a slurry. Stir the slurry into the simmering milk and whisk gently for 2 minutes until the milk thickens slightly into a light custard consistency. Remove cardamom pods with a spoon. Do not over-thicken—the mixture should coat the back of a spoon.

Finish with cream and saffron

Stir in the heavy cream and the saffron with its soaking liquid. Warm for another 1 minute just to incorporate, then remove from heat. Let the gur malai rest and cool to warm (about 10 minutes). The final texture should be creamy and pourable, slightly thicker than milk.

Prepare bread

Lightly spread softened unsalted butter on one side of each bread slice. This will help attain a golden crust when frying.

Pan-fry slices

Heat a nonstick or cast-iron skillet over medium heat. Add 1–2 teaspoons ghee or neutral oil and swirl to coat. Place bread slices butter-side down in the skillet (butter side contacts the pan). Cook 2–3 minutes until deep golden and crisp, then flip and cook the other side 1–2 minutes until warmed and lightly browned. Reduce heat slightly if bread browns too quickly.

Soak with gur malai

Transfer the hot toasted slices to a shallow dish or plate. Ladle 1/4 to 1/3 cup of the warm (not piping hot) gur malai onto each slice, letting it soak into the bread but not completely saturate it. Allow 1–2 minutes for absorption so the top remains creamy while the interior becomes custardy.

Garnish and finish

Dust each toast lightly with powdered jaggery (or powdered sugar) and sprinkle chopped pistachios and toasted flaked almonds evenly across the top. If desired, you can drizzle a teaspoon more of the warm gur malai over the garnished toast for extra gloss and richness.

Serve immediately while the toast is warm and the custard topping is creamy. Optionally accompany with a small extra pot of warm gur malai for spooning alongside.
