Lentil Pancake (Cheela) Batter

Soak and blend

Drain soaked moong dal. In a blender, combine soaked moong dal, gram flour, green chili, grated ginger, cumin seeds, turmeric powder, salt and 1/2 cup water. Blend to a smooth, pourable batter (similar to pancake batter). If too thick, add water 1 tablespoon at a time to reach a consistency that coats the back of a spoon.

Rest batter

Transfer batter to a bowl and let rest for 15–20 minutes. This improves texture and allows flavors to marry.

Cook cheelas

Heat a nonstick or cast-iron skillet over medium heat and brush lightly with oil. Pour about 1/4 cup batter per cheela (for 6–8 inch pancakes) onto skillet and spread gently with the back of a spoon into an even circle. Cook 2–3 minutes until edges lift and underside is golden. Flip and cook 1–2 minutes more until cooked through. Repeat, brushing skillet as needed, to make 6 cheelas. Keep warm stacked in a low oven (100–110°C / 210–230°F) or covered with foil.

Crab Bhurji (Filling)

Prepare ingredients

Ensure crab meat is picked clean of shells and patted dry. Beat the eggs lightly with a pinch of salt and pepper and set aside. Have onion, tomato, chilies and cilantro ready.

Sauté aromatics

Heat 2 tablespoons oil or ghee in a wide skillet over medium heat. Add chopped onions and sauté 3–4 minutes until translucent. Add ginger-garlic paste, chopped green chili and curry leaves (if using) and sauté another 1 minute until fragrant.

Cook tomatoes and spices

Add chopped tomato, turmeric, red chili powder, and salt. Cook 3–4 minutes, stirring, until tomatoes break down and oil separates slightly. Adjust heat to prevent burning.

Add crab

Stir in flaked crab meat and cook 2 minutes to heat through, folding gently so crab remains flaky. Taste and adjust salt and pepper.

Scramble eggs with crab

Push the crab mixture to one side of the pan. Add a small drizzle of oil if pan is dry, pour beaten eggs into the empty side and let them set slightly. Using a spatula, gently scramble the eggs, folding them into the crab as they set, until eggs are soft-cooked and fully incorporated with the crab (1–2 minutes). Avoid overcooking—eggs should be creamy.

Finish

Stir in chopped cilantro, lemon juice and garam masala. Cook 30 seconds more, then remove from heat. Taste and adjust seasoning with additional salt, pepper or lemon if needed.

To Assemble & Serve

Warm pan and assemble

Heat a small nonstick skillet over low-medium heat and add 1 tablespoon butter or oil. Place a warm cheela in the pan and spoon approximately 1/6 to 1/4 cup of the crab bhurji mixture onto the center, spreading slightly but leaving room at edges. Heat 20–30 seconds to warm filling and melt butter into pancake.

Fold and garnish

Fold cheela over the filling like an omelette or roll it up. Transfer to a serving plate. Repeat with remaining cheelas and filling. Garnish with additional chopped cilantro and serve immediately with lime wedges on the side.

Serving suggestions

Serve warm as an appetizer or a light main with a simple cucumber-yogurt raita or chutney. Leftover bhurji can be refrigerated for 1 day; reheat gently to avoid drying the crab and eggs.
