Infuse and blend base

Place the crushed cardamom pods, whole milk, and sugar in a small saucepan over medium heat. Warm just until sugar dissolves and aroma from cardamom is released, about 3–4 minutes. Remove from heat and let the milk cool to lukewarm, then strain out cardamom pods.

In a large bowl whisk strained yogurt, cooled cardamom-infused milk, sweetened condensed milk, lemon juice, and a pinch of sea salt until smooth. Taste and adjust sweetness; add the optional 2 tablespoons cold water only if the mixture seems too thick for freezing.

Chill mixture thoroughly in the refrigerator for at least 2 hours (or overnight) so it’s very cold before freezing — this yields a smoother texture.

If you have an ice cream maker: churn according to manufacturer’s instructions until thick and softly frozen (approx. 20–30 minutes). Transfer to a shallow container and freeze for 2–4 hours to firm up. If you do not have an ice cream maker: pour mixture into a shallow metal pan and freeze. Every 30 minutes for the first 2 hours, vigorously whisk or scrape the mixture with a fork to break ice crystals, repeating until smooth and scoopable.

Grapefruit Murrabba (quick preserved citrus)

Segment the grapefruits over a bowl to catch juices: remove top and bottom, cut away peel and white pith, and slice between membranes to free each segment. Reserve 2 tablespoons of the collected juices for the syrup.

In a small saucepan combine 1 tablespoon sugar with 3 tablespoons water, the reserved grapefruit juice, sliced ginger, and lemon zest. Bring to a gentle simmer over medium-low heat, stirring until sugar dissolves. Simmer for 3–4 minutes to develop flavor and slightly reduce; do not overcook — you want a glossy light syrup.

Remove from heat, add the optional peppercorns for a subtle spice, and let the syrup cool slightly. Add the grapefruit segments to the syrup, gently tossing to coat. Let the segments macerate at room temperature for 15–20 minutes, then refrigerate at least 30 minutes. Reserve two tablespoons of this syrup for plating.

Pistachio Chikki (crunchy brittle)

Line a small baking sheet with parchment and grease lightly with 1/2 tsp butter. Have your chopped pistachios measured and ready.

In a small heavy-bottomed saucepan combine 1/2 cup sugar and 1 tablespoon corn syrup. Over medium heat, without stirring, let the sugar melt and caramelize. You may gently swirl the pan to promote even melting. When the sugar reaches an amber color (about 320–340°F / 160–170°C if using a candy thermometer), remove from heat immediately.

Quickly stir in the chopped pistachios and 1/4 tsp salt until evenly coated. Immediately spread the hot mixture thinly onto the prepared parchment using a lightly greased spatula. Work quickly — the caramel sets fast.

Let the brittle cool completely at room temperature, about 15–20 minutes. Once set, break into small irregular shards (approx. bite-sized pieces). Store in an airtight container if not using right away.

Assembly & Garnish

Scoop the chilled yogurt ice cream into chilled dessert bowls or small serving glasses — about 2 generous scoops per serving.

Arrange 3–4 grapefruit segments from the murrabba alongside and atop the ice cream per serving. Spoon a little of the reserved grapefruit syrup over the ice cream for brightness (about 1/2 tablespoon per serving).

Scatter several pistachio chikki shards over each portion for crunch (about 1–2 tablespoons worth of broken chikki per serving).

Finish with toasted crushed fennel seeds (a light sprinkle), a few micro mint leaves, and optional edible flower petals for color. Serve immediately so the chikki retains its crunch against the cold lassi ice cream.
