Method

add tomatoes
Stir in the tomato paste and cook 1 minute. Add the canned tomato puree and 1 cup water, stir to combine. Bring the mixture to a gentle simmer.
simmer to concentrate
Reduce heat to low and simmer, uncovered, for 10–12 minutes to cook the raw tomato flavor and slightly reduce the sauce. Stir occasionally to prevent sticking.

Increase heat to medium-low. Add ground coriander, ground cumin, turmeric, paprika, optional hot chili powder, and salt to the tomato mixture. Stir and cook for 2–3 minutes so the spices bloom and integrate into the sauce.

If the sauce seems too thick, add up to 1/4 cup more water to reach desired consistency. Simmer 2 more minutes after adjusting.

To prevent the yogurt from splitting, take a small ladle of the hot tomato sauce and whisk it into the whisked yogurt to warm it (tempering). Then slowly whisk the tempered yogurt back into the simmering sauce.

Lower heat to very low. Add the remaining 4 tbs of butter in pieces, stirring until incorporated. Stir in the heavy cream and crushed kasuri methi. Simmer gently for 3–4 minutes—do not boil vigorously once cream is added to avoid curdling.
Optional Add-ins
If using cubed cooked chicken or paneer: gently fold into the finished sauce and simmer 2–3 minutes until heated through. If using lemon juice, add at the end to preserve brightness. For a richer texture, blend the sauce with an immersion blender for 20–30 seconds before adding cream, then proceed with finishing steps.
