Prepare shells
If using store-bought dried or soft kachori/puri shells, crisp them by shallow frying or baking: heat 2 tbs oil in a non-stick skillet over medium heat. Add shells in a single layer and cook 1–2 minutes per side until crisp and golden, turning gently. Alternatively, brush with oil and bake at 190°C (375°F) for 6–8 minutes until crisp. Drain on paper towels. Allow to cool slightly.
Make space for filling by carefully crushing a small hole on top of each shell with a spoon to create a pocket, or if flat puris, break into halves to form bowls. Keep shells ready on a serving tray.
Mix the finishing garnish: combine chopped coriander, pomegranate arils, chopped onion, chopped tomato, 1 tsp chaat masala, 1 tbs lemon juice and 1/2 tsp salt in a small bowl. Toss and set aside to finish each kachori.

Prepare sprouts
If sprouts are raw, blanch or steam them for 2–3 minutes until just tender, then drain and cool. Alternatively use lightly steamed sprouts to retain bite.
Cook beet-sprout mixture
Heat 1 tbs oil in a skillet over medium heat. Add 1 tsp cumin seeds and let them sizzle 10–15 seconds. Add grated beetroot and sauté 3–4 minutes until it softens slightly and releases color. Add the blanched sprouted moong, chopped green chili, grated ginger, 1/4 tsp turmeric, 1/4 tsp red chili powder, 1/2 tsp roasted cumin powder and 1/2 tsp salt. Cook, stirring frequently, for 4–5 minutes until flavors meld and excess moisture evaporates but mixture remains moist (not mushy). Taste and adjust seasoning; if using amchur add 1/2 tsp now or use the lemon alternative.
Remove from heat and let the mixture cool slightly to room temperature before filling shells so yogurt and chutneys don’t split.

Prepare yogurt and chutneys
Whisk the thick yogurt until smooth; if too thick, loosen with 1–2 tbs water to a pourable but still thick consistency. Mix in 1/4 tsp black salt and 1/2 tsp roasted cumin powder into the yogurt and taste for salt balance. Keep mint-coriander and tamarind-date chutneys ready in squeeze bottles or small bowls for quick assembly.
Assemble raj kachori
Working one shell at a time: place a crisp shell on a plate. Spoon about 2 tbs of the beetroot-raj filling into each shell (adjust to fit) so the pocket is filled but not overflowing. Drizzle about 1 tbs whisked yogurt over the filling, then add 1 tsp mint-coriander chutney and 1 tsp tamarind-date chutney over the yogurt for a balanced sweet-sour-spicy profile. Sprinkle 1–2 tbs of the chopped garnish mixture (onion, tomato, pomegranate, coriander). Finish with a generous pinch of sev, a light dusting of chaat masala (about 1/8 tsp per kachori) and an extra sprinkle of roasted cumin powder if desired.
