Roasted Eggplant & Prep
Preheat and prepare eggplants
Preheat oven to 220°C (425°F). Wash and pat dry the eggplants. Using a fork or knife, prick each eggplant a few times to prevent bursting. Lightly brush the skins with 1 tablespoon oil and sprinkle 1/2 tsp salt over them.
Roast until charred
Place the eggplants on a baking sheet lined with foil. Roast in the preheated oven for 30–40 minutes, turning once, until the skins are charred and the flesh is very soft. Alternatively, you can roast directly over an open flame (gas burner) turning until blackened and collapsed for a smokier flavor.
Steam and peel
Remove roasted eggplants to a bowl and cover with a plate or plastic wrap for 10 minutes — this steams the flesh and makes peeling easier. When cool enough to handle, peel off and discard the charred skin, and remove the stem. Drain any excess liquid and roughly mash the flesh with a fork or potato masher to a coarse, slightly chunky consistency. Set aside.
Bharta (cooked mixture)
Heat oil and temper
Heat 3 tablespoons oil or ghee in a large skillet over medium heat. When hot, add 1 teaspoon cumin seeds and let them sizzle for 10–15 seconds. If using, add 1/8 tsp asafoetida and stir once.
Sauté onions and chilies
Add 1 cup finely chopped onion and sauté for 6–8 minutes until soft and lightly golden. Add 2 finely chopped green chilies and continue to cook for 1 minute.
Add aromatics
Add 4 minced garlic cloves and 1 tablespoon minced fresh ginger. Sauté for 1–2 minutes until the raw smell disappears but garlic does not brown.
Cook tomatoes and spices
Add 1 cup finely chopped tomatoes and cook down for 6–8 minutes until the tomatoes are soft and oil starts to separate slightly. Stir in 1/2 tsp turmeric, 1 tsp red chili powder, 1 tsp ground coriander, and salt (approximately 1 tsp). Cook for 1–2 minutes to roast the spices.
Finish with spices and herbs
Sprinkle in 1/2 tsp garam masala and 1 tsp crushed kasuri methi (if using). Stir in 1 tablespoon lemon juice and 1/2 cup chopped fresh cilantro. If desired, swirl in 1 tablespoon butter or ghee for richness. Cook another 1–2 minutes and remove from heat.
To Serve
Transfer the Baingan ka Bharta to a serving bowl. Garnish with the remaining 1/4 cup chopped cilantro and an optional drizzle of ghee or a small pat of butter. Serve hot with roti, naan, paratha, or steamed rice.
