Method
Mango Kulfi Base
Prepare saffron
Lightly toast saffron strands between your palms for a few seconds, then soak them in 1 tablespoon warm milk to release color and aroma. Set aside.
Prepare gond katira
If using dried gond katira, soak 15 minutes in warm water until expanded, then strain and gently squeeze out excess water. Use approximately 1 tablespoon of the hydrated gum.
Remove cardamom pods. Whisk in sweetened condensed milk, granulated sugar, and the soaked saffron (with milk). Continue to cook on low 2–3 minutes to dissolve sugar and integrate flavors. Stir in the soaked gond katira so it disperses evenly.
Allow mixture to cool 10 minutes, then stir in 2 cups Alphonso mango puree until fully combined. Taste and adjust sweetness: add up to 1 tablespoon additional sugar or condensed milk if desired.
Phirni Layer
Drain the soaked basmati rice and grind it coarsely to a coarse powder or paste with a tablespoon of milk to avoid clumping. You want a coarse rice meal, not a smooth paste.
In a small saucepan, bring 1 cup full-fat milk to a simmer. Gradually whisk in the ground rice and cook over low heat, stirring constantly to prevent sticking, until the mixture thickens to a creamy porridge consistency (6–8 minutes).
Stir in powdered sugar, powdered green cardamom, and rose water. Cook 1–2 more minutes, then remove from heat and let cool to room temperature. Chill in the refrigerator until ready to assemble.
Falooda & Garnish
Prepare falooda sev according to package instructions (usually boil briefly until tender), rinse under cold water, drain well and toss with a few drops of rose water to prevent sticking. Chill.
Chop pistachios coarsely and set aside with toasted pine nuts and dried rose petals for garnish.
Assembly & Serve
If using frozen kulfi molds: unmold kulfis by dipping the molds briefly in warm water and pull out carefully. Place a kulfi on a chilled plate or glass.
For layered dessert in glasses: spoon a layer (about 2 tablespoons) of chilled phirni into the bottom of 4 serving glasses. Add a small handful (about 2 tablespoons) of chilled falooda sev. Gently pour or spoon 3–4 tablespoons of mango kulfi mixture (semi-frozen or softened) over the phirni to create a distinct mango layer. Repeat to fill glasses leaving 1/2 inch at top. Freeze assembled glasses 30–45 minutes if you want firmer set.
Just before serving, top each kulfi or glass with toasted pine nuts (about 1/2 tablespoon per serving), chopped pistachios, a pinch of amchur or lime zest if using (to accent mango), and scatter a few dried rose petals.
If serving with falooda: add a tablespoon of chilled falooda sev around the base or on top for texture. Serve immediately for layered glasses or serve frozen kulfi with a spoon of chilled phirni and falooda on the side.
