Aloo Mattar Satpura (Spiced Potato & Pea Pancake)
Prepare potato and pea base
Grate the peeled potatoes using the large holes of a box grater. Immediately transfer grated potato to a clean towel and squeeze firmly to remove excess moisture—this keeps the pancakes crisp. If using frozen peas, blanch in boiling water 1 minute, drain, and cool; if using fresh peas, lightly crush half with the back of a spoon.
Make batter
In a medium bowl combine grated potatoes, peas, chickpea flour, finely chopped green chili, grated ginger, cumin seeds, ground coriander, kashmiri chili powder, amchur (or lemon juice), chopped cilantro and salt. Add about 2–3 tablespoons water and mix to form a thick batter that holds together. The batter should be moist but not runny; adjust chickpea flour or water to achieve a scoopable consistency.
Form and fry satpura
Heat a large nonstick skillet over medium heat and add 1 tablespoon oil. For 8–10 cm pancakes, scoop roughly 2–3 tablespoons batter per pancake onto the pan and gently flatten into 1/3-inch thick rounds with the back of the spoon. Cook 3–4 minutes until golden brown and crisp, then flip and add another 1 teaspoon oil around each pancake. Cook 3–4 minutes until cooked through and evenly browned. Transfer to a paper towel-lined tray. Repeat with remaining batter, adding oil as needed.
Keep warm
If making ahead, keep cooked satpura in a single layer on a baking sheet in a 200°F (95°C) oven to stay crisp while you prepare the achari duck chaat.
Achari Duck Chaat
Warm and season duck
In a skillet over medium heat add 1 tablespoon oil (use duck oil if available). Add shredded cooked duck and warm, stirring 2–3 minutes to loosen any crisp bits. Sprinkle the pickling spice blend (achar masala) over the duck and toss for 1–2 minutes until the spices bloom and coat the meat. Taste and adjust: add up to 1/4 teaspoon more achar masala if you want a stronger pickle note.
Combine chaat elements
Turn off heat and transfer the seasoned duck to a bowl. While still warm, fold in sliced red onion, chopped tomato, roasted peanuts, pomegranate seeds, lemon juice, 1/4 teaspoon salt (adjust with total salt measurement), and half the chopped cilantro. Add 1 tablespoon tamarind chutney and 1 tablespoon green chutney and gently toss to coat. The warmth of the duck will slightly soften the onions and marry the flavors.
Finish with yogurt and spices
Whisk the yogurt until smooth and drizzle over the duck mixture or serve dolloped on each portion depending on desired look. Sprinkle chaat masala and remaining salt lightly over the top. Stir gently if you prefer the yogurt mixed in, or leave artfully streaked for contrast.

Prepare mathi
If using plain crackers or neutral mathi, brush each side lightly with melted butter and sprinkle a few toasted sesame seeds or nigella seeds. For store-bought flavored mathi, simply arrange them on a serving platter.
Assemble course one bites
Place one warm Aloo Mattar Satpura on each mathi (or cut satpura into quarters to top multiple crackers). Spoon a generous tablespoon of the achari duck chaat on top of each satpura. Finish with a small dollop of yogurt or a thin streak, a few pomegranate seeds, a sprinkle of roasted peanuts, microgreens, and a pinch of chaat masala. Serve immediately so the mathi remains crisp and satpura stays warm.
