Prep Shrimp

Pat the shrimp dry with paper towels. Make 2 shallow diagonal slashes on the outer curve of each shrimp if large — this helps the marinade penetrate and prevents curling.

Make Marinade

In a mixing bowl combine whisked yogurt, ginger-garlic paste, crushed ajwain seeds, finely chopped green chili, lemon juice, salt, turmeric and red chili powder. Mix until smooth and uniform.

Add the shrimp to the marinade and toss to coat thoroughly. Cover and refrigerate for 20–30 minutes (up to 1 hour). Do not marinate much longer than 1 hour to avoid the yogurt over-tenderizing the shrimp.

Assembly & Cooking

Heat a large nonstick or stainless steel skillet over medium heat. Add the ghee or neutral oil and once hot (it should shimmer), add butter and let it melt.

Add the whole ajwain seeds and let them sizzle 6–8 seconds until aromatic. If using curry leaves, add them now and fry briefly until crisp.

Add the thinly sliced onions and slit green chile. Sauté for 3–4 minutes until the onions are soft and just beginning to color, stirring frequently to avoid burning.

Increase heat to medium-high. Shake off excess marinade from the shrimp (retain marinade in the bowl) and add shrimp in a single layer to the pan, spacing them so they sear instead of steam. Cook undisturbed 1–1.5 minutes until the underside is pink and lightly browned.

Flip shrimp and add about 1–2 tablespoons of the reserved marinade around them (optional — for a light saucing and flavor continuity). Cook another 1–1.5 minutes until shrimp are opaque and just cooked through. Total cook time for large shrimp should be 2.5–3 minutes; avoid overcooking to keep them tender.

Sprinkle freshly ground black pepper and garam masala over the shrimp. Toss gently with the onions and ajwain seeds so flavors combine. Taste and adjust salt if needed.

Turn off heat and fold in chopped cilantro. Let the shrimp rest in the pan for 1 minute so flavors settle.

Transfer to a warmed serving platter. Serve immediately with lemon wedges on the side for squeezing over the shrimp.
