Prepare pickling brine

In a small saucepan combine white vinegar, water, sugar, pickling spice mix, mustard seeds and fenugreek seeds. Bring to a gentle simmer for 2 minutes to bloom spices and dissolve sugar. Remove from heat and let cool to warm, then stir in calamansi or lime juice. Transfer to a container and let cool completely (15–20 minutes).

Cure and sear duck

Pat duck breasts dry. Score the skin in a crosshatch pattern without cutting into the meat. Season skin and flesh with kosher salt and cracked pepper. In a cold, heavy skillet place the duck breasts skin-side down. Turn heat to medium and render skin fat slowly, 8–12 minutes, pressing occasionally and tilting pan to collect fat. When skin is deeply golden and crisp, flip and sear flesh side 1–2 minutes until medium-rare (internal 57–60°C / 135–140°F). Remove from pan and rest 6–8 minutes.

Pickle duck slices

Slice rested duck thinly across the grain. Place slices in a shallow dish and pour the cooled pickling brine over just to coat (do not fully submerge). Let sit 10–20 minutes at room temperature so the achari flavors lightly penetrate the meat. Drain briefly before assembly and reserve brine for other uses.

Achari Masala (Pickle Spice Blend)

Toast fennel, coriander, cumin and fenugreek seeds in a dry skillet over medium heat 1–2 minutes until fragrant, shaking pan to avoid burning. Cool slightly then grind coarsely with red chili flakes, nigella seeds and turmeric in a spice grinder or mortar and pestle to a coarse powder. Taste and adjust salt or chili as needed. Reserve 1–2 teaspoons to sprinkle on finished duck chaat.

Fenugreek Mathi (Cracker)

Make dough

In a bowl combine all-purpose flour, semolina, salt, fenugreek powder, ajwain and chili powder. Cut in cold butter with fingertips or a pastry cutter until mixture resembles coarse crumbs. Add cold water, 1 tablespoon at a time, and mix until a firm but pliable dough forms (squeeze should hold). Do not overwork. Chill wrapped 20–30 minutes.

Roll and cut

Preheat oven to 180°C (350°F) if baking, or heat oil in a skillet for shallow frying to 170°C (340°F). On a lightly floured surface, roll dough very thin (1–1.5 mm). Brush lightly with neutral oil and cut into small squares or diamond shapes (~4 cm). Prick each cracker with a fork to prevent puffing.

Cook mathi

Baking method: transfer crackers to a parchment-lined sheet, brush tops with a little oil, and bake 10–14 minutes, flipping halfway, until golden and crisp. Frying method: shallow-fry in batches in 2–3 mm of hot oil until golden and blistered, 1–2 minutes per side; drain on paper towels. Cool completely — they will crisp further. Season lightly with flaky salt while warm.

Chaat Toppings & Assembly

Prepare toppings: whisk yogurt until smooth and slightly loose. Have tamarind-date chutney and green chutney at hand. Finely chop onion and cilantro; toast sesame seeds if not already toasted.

Assemble Achari Duck Chaat Mathi: On a large platter or individual plates, arrange fenugreek mathi crackers as a base. Place a few slices of pickled duck over each cracker. Spoon a small dollop (about 1/2 tsp) of whisked yogurt on top, then streak tamarind-date chutney and dot green chutney around for contrast. Sprinkle a little achari masala over each duck slice, scatter chopped onion, cilantro, toasted sesame seeds and microgreens. Finish with a light sprinkling of flaky salt and a squeeze of lemon or lime to taste.

Serve immediately so mathi remain crisp. Leftover pickled duck can be refrigerated up to 48 hours; refrigerate mathi separately to preserve crunch.
