Mix dry ingredients

In a large bowl, sieve or whisk together 1.5 cups besan, 0.25 cup rice flour, 1 tsp salt, 0.5 tsp turmeric, 0.5 tsp red chili powder and 0.5 tsp ajwain (or cumin). Ensure the mixture is lump-free.

Add wet ingredients

Whisk in 300 ml water, 1 tablespoon oil and 1 beaten egg until smooth. The batter should have a pourable pancake consistency — slightly thinner than pancake batter. If too thick, add up to 50 ml additional water, 1 tablespoon at a time.

Rest

Let the batter rest for 10–15 minutes at room temperature. This hydrates the flours and makes the cheela tender. Stir briefly before using; adjust salt or spice if needed.

Crab Masala

Prep aromatics

Heat 2 tablespoons oil in a skillet over medium heat. Add 1 chopped onion and sauté until translucent and starting to brown at the edges, about 5–6 minutes. Add 3 minced garlic cloves, 1 inch minced ginger and 1 chopped green chili; cook 1–2 minutes until fragrant.

Cook tomatoes and spices

Add 1 chopped tomato and cook until it softens and oil separates slightly, about 3–4 minutes. Stir in 1 tsp coriander powder, 0.5 tsp garam masala, 0.25 tsp turmeric, 0.5 tsp red chili powder and 1 tsp salt. Cook the spices for 30–45 seconds to bloom their flavor.

Add crab

Add 400 g picked crab meat and gently fold into the masala. Cook on low–medium heat for 3–4 minutes just to heat through and allow flavors to marry. Taste and adjust seasoning. Remove from heat and stir in 1 tablespoon lemon juice and 0.25 cup chopped coriander. Allow the mixture to cool slightly so it’s easy to handle on the tawa.

Consistency check

The crab filling should be moist but not runny; if it’s too wet, gently cook a minute longer to reduce excess moisture. Break up any large lumps of crab so the filling spreads evenly on the cheela.

Preheat tawa

Heat a large nonstick tawa or skillet over medium heat until hot. Brush or spread a thin film of the neutral oil across the surface.

Test batter

Drop a teaspoon of batter onto the tawa; it should sizzle and spread slightly. If it browns too quickly, reduce heat; if it doesn’t sizzle, increase heat slightly.

Spread cheela

Pour a ladle (about 1/3 cup) of batter onto the tawa and quickly spread into a 6–7 inch round using the back of the ladle (you can keep it slightly thicker than a dosa). Drizzle a few drops of oil around the edge and on top.

Add crab masala

When the edges start to set but the top is still wet (about 30–45 seconds), spoon 2–3 tablespoons of the crab masala onto one half of the cheela and gently spread it to the edge, leaving a small margin. If needed, spoon a little batter over the crab to help it adhere (don’t overload).

Cook first side

Cook the cheela on medium heat 2–3 minutes until the underside is golden brown and the top has set. Reduce heat if it browns too fast.

Flip and finish

Using a spatula, carefully flip the cheela to cook the crab-topped side. Press gently and cook another 1.5–2 minutes until the filling is heated through and the cheela is cooked. Brush a little butter on top in the last 30 seconds for extra flavor.

Repeat

Repeat with remaining batter and crab masala, adding oil/butter to the tawa as needed. For a crispier finish, cook a bit longer on medium-low heat after flipping.

Garnish & Serve

Stack cheelas on a plate and sprinkle with additional 0.25 cup chopped coriander and 0.5 tsp chaat masala. Serve with lemon wedges on the side.

Serve hot with mint-coriander chutney or a cooling yogurt dip. These cheelas are best eaten immediately — crisp at the edges and soft inside with the savory crab filling.
