Method A — Quick shallow frying (crispiest)

Pour the neutral oil into a wide, heavy frying pan to a depth of about 5–7 mm and heat over medium-high until shimmering (about 180°C equivalent). Test with a small scrap of papad; it should sizzle immediately. Slide one papad into the oil — it will bubble and expand quickly. Using tongs, press gently so it puffs evenly, fry 10–20 seconds until golden and crisp, then lift onto a paper towel-lined plate to drain. Fry remaining papads in batches; keep warm in a low oven (100°C) if needed. Serve with lemon wedges.

Method B — Dry roasting (no oil)

For a lighter option, hold a papad with tongs over a gas flame or on a hot cast-iron skillet and rotate constantly until the papad puffs and the surface browns in spots (20–40 seconds). Alternatively microwave 1 papad at a time on high for 30–40 seconds until crisp. Transfer to a plate and keep warm. Serve with lemon wedges.

Choose the method you prefer (shallow frying yields the crispiest, dry-roasting/microwaving is oil-free). If shallow-frying, take care with hot oil and do not overcrowd the pan.

Hari Aam Chutney (Green Raw Mango Chutney)

Prepare ingredients: peel and roughly chop the raw green mango so it measures about 1 cup. Rinse cilantro and mint; remove thick stems if necessary. Roughly chop green chilies.

Add the chopped raw mango, cilantro, mint, green chilies, jaggery, roasted cumin powder, black salt, regular salt, lemon juice and 1/4 cup cold water to a blender or food processor.

Blend on high until very smooth, scraping down the sides once. Add up to an extra 1–2 tablespoons of water if needed to reach a thick, spoonable consistency. Taste and adjust jaggery, salt or lemon to balance sweet, sour and spicy notes.

Transfer to a small bowl and refrigerate for at least 10 minutes to let flavors marry. Serve chilled alongside papads. Keeps refrigerated in an airtight container for up to 4–5 days.

BBQ Imli Chutney (Smoky Tamarind Chutney)

Loosen the tamarind pulp by mixing the tamarind with 1/2 cup warm water and mashing with a spoon; strain through a fine sieve into a small saucepan to remove fibers/seeds, pressing to extract as much pulp as possible. You should have roughly 1/2 cup strained tamarind liquid.

Add the strained tamarind liquid to the saucepan with the jaggery (or brown sugar), smoked paprika, roasted cumin powder, chili powder, peeled garlic clove and salt. Stir to combine.

Bring the mixture to a gentle simmer over medium-low heat and cook, stirring occasionally, until slightly thickened and glossy — about 8–10 minutes. Break up the garlic clove with the back of a spoon so it infuses the sauce.

While the chutney simmers, warm 1 teaspoon oil in a small skillet over low heat. Add 1/4 tsp mustard seeds and wait until they crackle (careful — they can pop). Pour the spiced oil and mustard seeds into the simmering chutney and stir. Remove from heat.

Taste and adjust sweetness, salt or smoked paprika for smokiness. If you prefer a completely smooth sauce, remove the garlic clove and blitz the chutney briefly in a blender or use an immersion blender. Cool to room temperature before serving. The chutney thickens as it cools and will keep refrigerated for up to 10 days.

Mooli Raita (Radish Raita)

Place the grated radish in a sieve or clean towel and press/squeeze gently to remove excess water until the radish is moist but not watery. This prevents the raita from becoming runny.

In a bowl, whisk the plain yogurt until smooth. Stir in the squeezed grated radish, salt, roasted cumin powder, chaat masala, chopped cilantro, minced green chili and fresh lemon juice until evenly combined. Taste and adjust seasoning.

Prepare a quick tempering: heat 1 teaspoon oil in a small pan over low heat. When hot, add 1/4 tsp mustard seeds and the curry leaves. Allow the mustard seeds to pop (cover briefly if they splatter). Swirl the hot oil and tempering into the raita and stir to distribute.

Chill for 10–15 minutes to meld flavors, then serve cold alongside papads. Keeps refrigerated up to 2 days (radish may release more moisture over time; stir before serving).
