Method
Kala Chana (black chickpeas)
Soak the kala chana
Rinse 1.5 cups dried kala chana under cold water until the rinse water runs clear. Transfer to a bowl and cover with at least 3–4 times the volume of fresh water (about 1000 ml). Soak for 8 hours or overnight at room temperature.
Cook the kala chana
Drain the soaked chana and transfer to a pressure cooker or pot. Add about 700–800 ml fresh water and 1 tsp salt. Pressure cook on medium-high until you get 6–8 whistles (about 20–25 minutes on a typical stovetop pressure cooker) or simmer in a covered pot for 45–60 minutes until tender but not mushy. If using an Instant Pot/ electric pressure cooker: high pressure for 25 minutes with natural pressure release. Cooked chana should be soft but hold shape; drain any excess water and reserve 2–3 tbs of cooking liquid.
Optional faster shortcut
If using canned or pre-cooked kala chana, drain and rinse 2 cups cooked chana, then skip to the tempering step. Reduce the quantity of salt while seasoning since canned beans may be salted.
Temper and lightly mash
Warm 1 tbs oil in a skillet over medium heat. Add the drained chana and sauté for 2–3 minutes to dry off excess moisture. Lightly press about 1/4 of the chana with the back of a spoon to create a mix of whole and broken beans (this gives better texture for chaat). Remove from heat and transfer to a mixing bowl. Reserve the skillet for toasting peanuts or warming chutneys if desired.

Prepare and taste the chutneys
If chutneys are store-bought, briefly warm them in the skillet (30–45 seconds) to loosen them — 0.33 cup tamarind chutney and 0.25 cup green chutney. In a small bowl whisk together 2 tbs lemon juice with the tamarind chutney if it’s very thick to create a pourable consistency. Keep green chutney fresh and slightly runny; add a teaspoon of water if too thick.
Season the kala chana
To the bowl with the cooked chana add: 1.5 tsp roasted cumin powder, 2 tsp chaat masala, 1 tsp amchur, 0.5 tsp red chili powder, 0.5 tsp black salt. Toss well to coat. Taste and adjust salt and amchur (tang) — add up to 0.5 tsp additional salt if needed. Add about 1–2 tbs of the reserved cooking liquid if the mixture feels dry; the mixture should be moist but not soupy.
Finish the chana mixture
Fold in 0.5 cup finely chopped red onion, 0.5 cup chopped tomato, 1 chopped green chili (adjust to heat preference), 0.5 cup chopped cilantro, 0.25 cup roasted peanuts, and 2 tbs grated coconut. Add 2 tbs lemon juice and mix gently to combine. This is the main chaat filling — taste one bite and balance salt, heat, and tang as needed.

Deseed the tomato before chopping to avoid excess moisture. Finely chop the onion and soak for 5 minutes in cold water if you want to reduce sharpness; drain well. Roughly chop roasted peanuts if not already done. Keep pomegranate arils, sev, grated coconut and chopped cilantro ready in separate small bowls for quick assembly.
Toast fennel and coconut (optional)
If using plain fennel seeds and desiccated coconut, dry-toast them in the warmed skillet for 30–45 seconds until fragrant. This step enhances aroma — allow to cool slightly before using.
Paan (betel) & Garnish
Prepare the betel leaves
Wash betel leaves gently under running water, pat dry with a paper towel. Trim the stem stalk if needed so the leaf can sit flat. Lay leaves out on a tray, vein-side up (so the tasting side is smooth).
Assemble each paan patta chaat
On each betel leaf, optionally spread 1/6 tsp gulkand (a small smear — optional, for a sweet floral counterpoint). Place 1.5 to 2 tbs of the seasoned kala chana mixture in the center of the leaf. Drizzle about 1/2 tsp tamarind chutney and 1/2 tsp green chutney over the chana. Sprinkle a pinch of roasted cumin powder, a light dusting of chaat masala (about 1/8 tsp), a few pomegranate arils, a few chopped peanuts, 1/2 tsp grated coconut, and a small pinch of toasted fennel seeds. Finish with 1 to 2 teaspoons of sev for crunch and a few sprigs of cilantro. Squeeze a few drops of lemon if desired and add a tiny pinch of finishing salt to taste.
Presentation and serve
Arrange the assembled leaves on a platter immediately before serving so the sev stays crisp. Serve the remaining chana mixture, chutneys and extra sev on the side for refills. These are meant to be eaten in one or two bites — enjoy immediately for best texture and contrast of flavors.
Make-ahead and storage
You can prepare the cooked kala chana and chutneys up to 24 hours ahead and refrigerate separately. Do not assemble the paan leaves more than 15–20 minutes before serving or the leaves will become soggy and the sev will lose crunch. Store leftover assembled leaves in a single layer covered for up to 2 hours, but texture will degrade.
