Soak the matka

If using an unglazed earthen pot (matka), submerge it in water for 20–30 minutes to hydrate and reduce breakage. Drain and set aside. Preheat oven or prepare stove space where the matka will simmer.

Prepare the meat

Pat the minced lamb dry with paper towels if very wet. Season the keema lightly with 1 tsp salt (from total) and set aside for 10 minutes while you prepare other ingredients.

Peel and dice the potatoes into ~1.5 cm cubes. Keep them in water to prevent discoloration until ready to add.

Dry roast & grind the Beliram masala

Heat a small skillet over medium heat. Add coriander seeds, cumin seeds, fennel seeds, peppercorns, cloves, cardamom, and the cinnamon stick. Dry-roast, stirring constantly, until fragrant and the coriander darkens slightly (2–3 minutes). Remove from heat, cool for 5 minutes, then grind to a fine powder in a spice grinder. Set aside. Reserve the bay leaves whole for later use.

Caramelize the onions

Heat the vegetable oil and ghee together in a heavy-bottomed pan (or the matka if stove-safe) over medium heat until shimmering. Add the thinly sliced onions and 1/2 tsp salt. Cook, stirring occasionally, until deep golden brown and caramelized (18–22 minutes). Remove about 1/3 of the fried onions and set aside for garnish; keep remaining onions in the pan.

Add aromatics

To the remaining onions in the pan, add bay leaves and the ginger-garlic paste. Sauté on medium-high for 2–3 minutes until raw smell disappears. Add the slit green chilies and chopped/puréed tomatoes. Cook until the tomatoes break down and the oil begins to separate (6–8 minutes).

Combine spices and yogurt

Lower the heat to medium. Stir in the ground Beliram masala (from earlier), ground coriander, turmeric, red chili powder and the remaining 1 tsp salt. Cook for 1 minute to toast the powdered spices. Whisk the beaten yogurt to smoothness to avoid curdling, then add 1–2 tbs of the hot tomato-onion mix into the yogurt to temper it. Stir the tempered yogurt into the pan.

Brown the keema

Increase heat to medium-high, add the minced lamb and spread it into an even layer. Let it sear without stirring for 2 minutes to develop some color, then break up with a spatula and continue cooking until the meat is mostly cooked through and no longer pink (6–8 minutes). As it cooks, use the spatula to break the keema into loose crumbles.

Add potatoes and liquid

Drain the diced potatoes and add them to the pan. Pour in 300 ml water or light lamb stock, bring to a gentle simmer, stir, then reduce heat to low. If using a matka, transfer the entire mixture into the soaked clay pot carefully now (see note) and cover with its lid. If you are already using a stoveproof matka, keep it on low heat. Simmer gently for 35–45 minutes, stirring once or twice, until the potatoes are tender and the curry has thickened. Skim excess fat from the surface if desired.

Finish seasoning

About 7–10 minutes before the end of cooking, sprinkle the garam masala evenly over the curry, crush the kasuri methi between your palms and add it, and add the remaining 1/2 tsp salt if needed (taste carefully). Stir gently to incorporate and let the curry finish cooking so the spices bloom into the gravy.

Final touches

Turn off the heat. Stir in the chopped cilantro, squeeze the lemon wedge over the curry to taste, and scatter the reserved fried onions on top for crunch (save a little cilantro and fried onion for final garnish). If you used a matka and it went into an oven or low flame, allow the pot to rest covered for 5 minutes before opening.

Serve

Spoon Matka Keema Beliram Lamb Curry directly from the clay pot into a serving bowl or bring the matka to the table for dramatic service. Serve hot with steamed basmati rice, rotis, or naan. Provide extra lemon wedges and chopped cilantro on the side.

Notes on matka use: If transferring a hot pan mixture into a soaked clay pot, warm the matka gradually (do not put a cold matka on high heat) to avoid cracking. Alternatively, cook fully in a heavy pan then transfer to the matka and cover to infuse the earthy matka aroma for 10–15 minutes before serving.
