Mix and knead
In a large bowl combine whole wheat flour, all-purpose flour, salt, and sugar. Add 2 tablespoons oil and start adding warm water gradually. Mix and knead into a soft, pliable dough (about 6–8 minutes). Cover with a damp cloth and rest for 20–30 minutes.
Filling (Mix of vegetables & paneer)
Prepare vegetables and paneer
Heat 1 tablespoon oil in a small pan on medium heat. Add chopped onion and sauté until translucent (2–3 minutes). Add chopped capsicum and grated carrot; sauté for another 2 minutes until slightly softened. Remove from heat and let cool slightly.
Combine filling
In a bowl combine grated paneer, mashed potato, the sautéed vegetables, chopped green chilies, cilantro, roasted cumin powder, garam masala, red chili powder, amchur, salt, and lemon juice. Mix thoroughly so the filling is cohesive but not wet. Adjust salt and lemon to taste. If filling is too moist, squeeze out small amount of moisture from paneer or add a tablespoon of dry flour/dalia to bind.
Assemble and Cook Paranthas
Portion the dough and filling
Divide dough into 8 equal balls (for 4 servings, two paranthas per person) and keep covered. Divide the filling into 8 equal portions and roll each into a small ball.
Roll stuffed parantha
Take one dough ball, dust with dry flour, and roll into a small circle about 4–5 inches. Place one portion of filling in the center. Bring edges together to seal the filling inside and pinch to close completely. Flatten gently and dust with dry flour. Using a rolling pin, roll the stuffed ball gently into a round about 6–7 inches in diameter. Work gently so the filling doesn't burst out; re-seal if needed.
Cook on tava/griddle
Heat a heavy tawa or skillet over medium heat until hot. Place the rolled parantha on the hot tava. Cook for 30–40 seconds until small bubbles appear, then flip. Apply a little ghee or oil on the cooked side; flip again and press gently with a spatula, spreading the ghee. Cook until both sides are golden brown with crisp spots, about 1–2 minutes per side adjusting heat as necessary to avoid burning. Repeat with remaining dough and filling, keeping cooked paranthas covered in a cloth to stay warm.
Serve
Serve mix paranthas hot with yogurt, pickle, or a chutney of choice. They also pair well with raita or a side salad.
