In a large bowl combine 2 cups whole wheat flour and 1 tsp salt. Add 1 tablespoon oil. Start adding 2–3 tablespoons water and knead into a firm, smooth dough. Add more water 1 teaspoon at a time if needed. Knead for 5–7 minutes to develop elasticity.

Cover dough with a damp cloth and rest for at least 20–30 minutes while you prepare the filling. Resting makes the paranthas softer.

Cauliflower Filling (Gobi)

Prep the cauliflower: wash and pat dry. Grate finely with a box grater or pulse in a food processor to make fine crumbs. Pat the grated cauliflower in a clean kitchen towel or paper towels to remove excess moisture—press until mostly dry.

Heat 1 tablespoon oil in a skillet over medium heat. Add the finely chopped onion and sauté 2–3 minutes until soft and translucent.

Add the grated cauliflower, chopped green chili, grated ginger, minced garlic and salt (1 tsp). Cook, stirring often, for 6–8 minutes until the cauliflower is tender and most moisture has evaporated. Break up any clumps with the spoon.

When moisture is mostly gone, add 1/2 tsp garam masala, 1/2 tsp ground cumin, 1/2 tsp amchur (or 1/2 tsp lemon juice), 1/4 tsp red chili powder, and 2 tablespoons chickpea flour (if using). Stir to combine and cook 1–2 minutes more to remove raw flour taste.

Taste and adjust salt/spice, then remove from heat. Stir in 1/4 cup chopped fresh cilantro. Cool the filling to room temperature—this prevents tearing the rolled dough.

Assembling Paranthas

Divide rested dough into 8 equal portions (for 8 medium paranthas). Roll each portion into a smooth ball. Similarly divide cooled cauliflower filling into 8 portions (about 2–3 tablespoons each).

Lightly flour your work surface. Take one dough ball and roll into a 4–5 inch circle with a rolling pin. Place one portion of filling in the center.

Bring the edges of the dough up over the filling to meet in the middle and pinch to seal, forming a filled pouch. Press gently to flatten, then dust with a little flour and roll out carefully into a 7–8 inch circle. Use gentle, even pressure to avoid tearing; if filling escapes, reseal and continue.

Repeat with remaining balls and filling.

Cooking Paranthas

Heat a heavy skillet or tawa over medium-high heat until hot. Reduce heat to medium. Place one rolled parantha on the skillet.

Cook 30–45 seconds until you see small bubbles forming and the underside has light brown spots. Flip and add about 1/2 teaspoon oil or ghee around the edges and on the surface. Cook another 30–45 seconds, pressing gently with a spatula so it cooks evenly and puffs slightly.

Flip once more if needed and cook until both sides have golden-brown spots and the parantha is cooked through, about 1–1.5 minutes more total per parantha. Adjust heat if browning too fast.

Transfer to a plate and keep covered with a clean towel while you cook remaining paranthas to retain softness. Serve hot.

To Serve

Serve gobi parantha hot with yogurt (dahi), pickles (achar), and/or a dollop of butter or ghee on top. They are best fresh but can be stored airtight in the refrigerator for up to 2 days and reheated on a skillet.
